CROCK POT CHICKEN PAPRIKA -- LOW CARB

Crock Pot Chicken Paprika -- Low Carb image

Low carbing it? This makes a great supper, and it's so easy just to prepare in the morning and it's ready when you come home hungry for supper! I've doubled the recipe and froze the chicken breasts in single servings to just pop in the microwave.

CROCK POT CHICKEN PAPRIKA

I so love crock pots. Just put it in and walk away. This is best served with noodles I think but many use mash potatoes

Provided by Stormy Stewart

Categories     Chicken

Time 8h15m

Number Of Ingredients 10

1 1/2 lb chicken cut into 3/4 inch pieces (without skin or bones)
1 1/2 c carrots, sliced
1 onion diced
1 bell pepper, chopped
3 tsp paprika
1/2 tsp peppered seasoning salt
1 can(s) cream of chicken soup
1 c frozen sweet peas
1/2 c sour cream
1 clove garlic, diced

Steps:

  • 1. In a 4 qt crock pot combine chicken, carrots, onion, pepper, paprika, seasoning salt and soup and mix well. Cover and cook 6-8 hours on low
  • 2. Ten minutes before serving stir in peas and sour cream, cover and cook until heated about 10 minutes. Serve with noodles or mash potatoes

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the necessary ingredients and tools ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose the Right Chicken: For best results, use boneless, skinless chicken breasts or thighs. If you prefer dark meat, chicken thighs are a great option as they stay tender and juicy during the long cooking time.
  • Brown the Chicken: Searing the chicken in a hot skillet before adding it to the slow cooker helps develop flavor and color. This step is optional but highly recommended.
  • Use a Good Quality Paprika: The quality of your paprika will greatly impact the flavor of the dish. Choose a paprika that is fresh and has a vibrant red color.
  • Adjust the Cooking Time: The cooking time will vary depending on the size and type of chicken you are using. Generally, boneless, skinless chicken breasts will take about 4-6 hours on low or 2-3 hours on high. Chicken thighs may take a bit longer, about 6-8 hours on low or 3-4 hours on high.

Conclusion:

This crock-pot chicken paprika is a simple yet flavorful and satisfying dish that is perfect for a busy weeknight meal. It's easy to prepare, and the slow cooker does all the work, making it a great option for those short on time. Serve it over rice, noodles, or mashed potatoes for a complete and delicious meal that the whole family will love.
