- 3. Put onion and pepper in the bottom of Crock Pot.
- 4. Add green chilies.
- 5. Arrange chicken breasts on top of vegetables.
- 6. Sprinkle fajita seasoning over the chicken.
- 7. Top with one can of mild green enchilada sauce.
- 8. Place lid over Crock Pot. Turn on high and let cook for approximately 6 hours.
- 9. Remove chicken breasts from Crock Pot and shred them.
- 10. Add chicken back to vegetables and mix all together.
- 11. Serve on warmed flour tortillas, with cheddar cheese, sour cream, and whatever else you like.

Edited to add: I just made these again last night using 1 lb of pork stir fry strips instead of chicken and it turned out great! Very flavorful. I stirred in an extra TBS of taco seasoning an hour before it was done based on the other reviews but I'm not sure it needed it. I would suggest maybe only adding the extra taco seasoning if your chicken breasts are large or you're using more than a pound of pork. These are really easy to make and taste Great rolled up in warm flour tortillas with all the usual fajita toppings.
