CHICKEN CREOLE

Chicken Creole image

This is a very forgiving recipe - add or reduce seasonings to your taste. I've been making this for over 20 years and ever so often I'm asked - Have you fixed Chicken Creole lately? So much for subtle hints. I serve this over my own yellow rice (just add turmeric to your rice as it cooks) as that is how we prefer it. Some fresh baked French Bread w/garlic butter and large tossed salad. Very hearty meal that will leave guests begging for another Mardi Gras invite.

CROCKPOT CHICKEN CREOLE

Crockpot Chicken Creole image

I love a good chicken leg recipe. No one ever said you have to pay a lot to eat well. This is homestyle Cajun comfort food, easily made in the slow cooker. It's not that much different from my chicken gumbo the way I learned, except this is thicker, and has no okra or gumbo file.

Provided by Sue L

Categories     Chicken

Time 4h20m

Number Of Ingredients 14

2-1/2 lb bone-in chicken legs and/or thighs
1 c chopped onion
1 c diced celery
1 green bell pepper, diced
3 clove garlic, chopped
1 tsp dried thyme
2 Tbsp olive oil
2 can(s) diced tomatoes (15.5 ounces each)
2 Tbsp prepared roux
1/2 c dry red wine, such as cabernet sauvignon
1 tsp cajun spice blend
salt and black pepper to taste
1 splash tabasco sauce
steamed long grain rice to serve

Steps:

  • 1. Heat oil in a large nonstick skillet and brown chicken pieces; then place them in the bottom of the crock.
  • 2. Add the onion, celery, bell pepper, garlic and thyme to the pan and saute for about 2-3 minutes until onions become translucent.
  • 3. Add the red wine to the pan and stir, letting it pretty much cook off.
  • 4. Stir inn the roux, diced tomatoes, cajun spice, salt and black pepper. Add hot sauce to taste.
  • 5. Pour mixture over the chicken legs in the crock, then cover and cook on low for 4-5 hours or until chicken is cooked through.
  • 6. Serve with steamed rice (I also like adding more hot sauce but that's just me).

Tips:

  • For a more flavorful dish, use a combination of chicken thighs and breasts. The thighs will add richness and flavor, while the breasts will provide a leaner protein.
  • If you don't have a slow cooker, you can also make this recipe in a Dutch oven over low heat.
  • Be sure to use a good quality Creole seasoning blend. This will make a big difference in the flavor of the dish.
  • If you like your food spicy, add a pinch of cayenne pepper or a few dashes of hot sauce.
  • Serve the chicken creole with rice, mashed potatoes, or your favorite side dish.

Conclusion:

This crock pot chicken creole is a delicious and easy-to-make dish that is perfect for a busy weeknight meal. It is also a great recipe for meal prepping, as it can be made ahead of time and reheated later. With its bold flavors and tender chicken, this dish is sure to be a hit with your family and friends.
