This was a combination of a number of recipes I came across trying to find one that would use the crock pot and the ingredients I had on hand. It turned out FABULOUS! I served it over well-toasted garlic bread with a salad and sliced cantaloupe on the side. Healthy, low carb, simple and impressive.

Categories     Chicken Breast

Time 5h5m

Yield 4 serving(s)

Number Of Ingredients 6

4 chicken breasts
1 (14 1/2 ounce) can French style green beans, drained (reserve some liquid to add to crock pot, I used Green Giant)
1 (14 1/2 ounce) can del monte canned sliced potatoes, drained
salt and pepper
1 dash of mccormick's 1 step garlic and herb seasoning
1/4-1/2 cup fat-free Italian salad dressing

Steps:

  • Place chicken breasts in bottom of cooker, sprinkle salt and pepper and garlic seasoning on breasts. Place potatoes over top chicken, then green beans on top. Pour dressing over top beans (enough to cover well). Place lid on cooker and cook on low for 5 hrs (approx).

Tips:

- Use dried beans instead of canned beans for a more flavorful and economical dish. - Soak the beans overnight or for at least 8 hours before cooking to reduce cooking time. - Rinse the beans thoroughly before cooking to remove any dirt or debris. - Add a bay leaf, garlic clove, and a teaspoon of salt to the pot of beans while cooking for extra flavor. - Use a slow cooker with a removable crock for easy cleanup. - Add the chicken, beans, and greens to the slow cooker in layers, with the chicken on the bottom and the greens on top. - Cook the dish on low for 8-10 hours or on high for 4-6 hours, or until the chicken is cooked through and the beans are tender. - Serve the dish over rice or with cornbread.

Conclusion:

This crock-pot chicken, beans, and greens recipe is a delicious and easy way to enjoy a healthy and flavorful meal. The slow cooker does all the work, so you can sit back and relax while dinner cooks. This dish is also a great way to use up leftover chicken or beans. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
