CROCK-POT CHEESY MEXICAN CHICKEN AND RICE

Crock-Pot Cheesy Mexican Chicken and Rice image

A delicious combination of cheese, chicken, salsa and rice. I created this recipe when I needed to make dinner in the crockpot because my husband was redoing the floors in the kitchen and I had no stove to use. Thanks to him a new chicken recipe was born. I use my homemade canned salsa but any salsa will do. Also, we mostly eat chicken breast, but you can use any type of chicken. The cooking time will need adjusted longer for dark meat or chicken on the bone. There are several variations for this recipe such as adding beans, corn, mushrooms, etc. The possibilities are endless.

CHEESY MEXICAN CHICKEN AND RICE

This recipe originally came from Homemade Gourmet and called for Spanish rice prepared on the side. I got lazy and decided to experiment with the rice. The result: a delicious one dish crock-pot meal that was effortless to prepare! The rice was moist, well cooked, and amazingly cheesy. The chicken also turned out perfectly tender.

  • Cover; cook on Low heat setting 6 hours.
  • Uncover; sprinkle cheese over chicken. Cover; cook on Low heat setting 10 minutes longer.
  • Meanwhile, cook rice as directed on packages.
  • Serve chicken over rice. Top with cilantro if desired.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Prep ingredients beforehand: Before starting the slow cooker, make sure all ingredients are prepped and ready to go. This includes chopping vegetables, measuring spices, and shredding cheese.
  • Choose the right rice: Long-grain white rice is the best choice for this recipe, as it won't get mushy and will hold its shape well in the slow cooker. You can also use brown rice, but it may take longer to cook and have a chewier texture.
  • Don't overcook the chicken: Chicken breasts tend to overcook easily in the slow cooker. To prevent this, cook on low for 6-8 hours or on high for 3-4 hours, or until the internal temperature reaches 165°F (74°C).
  • Don't add too much liquid: The rice will absorb the liquid from the salsa and diced tomatoes, so you don't need to add any extra. If you do, the rice may become too mushy.
  • Use a variety of cheeses: A blend of Mexican cheeses, such as cheddar, Monterey Jack, and queso Oaxaca, will give the dish a rich and flavorful cheesy sauce.
  • Serve with your favorite toppings: Top the chicken and rice with your favorite Mexican-inspired toppings, such as sour cream, guacamole, salsa, pico de gallo, or shredded lettuce.

Conclusion:

This Crock-Pot Cheesy Mexican Chicken and Rice is a quick and easy recipe that is perfect for busy weeknights.
