CROCK POT CAJUN POT ROAST

Crock Pot Cajun Pot Roast image

In the late 1960's I got this from a small Restaurant outside of Houma Louisiana. I remember I "oiled" the cook's vocal cords with a lot of cold Jax Beer to finesse the recipe out of him. About the only thing I've changed is re figuring it for the crock pot.

1 -2 teaspoon cajun seasoning (Cajun Spice Rub Mix Recipe or store bought)
1/2 cup flour
1/4 teaspoon paprika
1/4-1 teaspoon cayenne pepper (or Powder recipe #73907) or 1/4-1 teaspoon hot red pepper flakes (or Powder Oven Dried Hot Peppers-Flakes or Powder)
1/4 teaspoon salt
10 chicken wings, cut up two pieces from each wing with the tips discarded defrosted washed and towel dried

celery

Steps:

  • Heat oil in a deep fryer to 375°F.
  • Combine the butter, hot sauce, and garlic powder in a small saucepan over low heat.
  • Heat until the butter is melted and the ingredients are well blended; set aside.
  • Combine the flour, Cajun Spice Mix Recipe, paprika, cayenne, and salt in a large zip lock bag put the wings into the bag shake to coat each wing evenly.
  • Put the wings in the refrigerator for 1 hour (helps adhered flour to wings).
  • Put all the wings into the hot oil and fry them for 10 to 15 minutes.
  • Remove the wings from the oil to a paper towel to drain.
  • As soon as drained into the hot sauce mixture stir to coat them.
  • Serve with lots of Blue cheese dressing and celery sticks on the side.
  • This will help cool down the heat.

Tips:

  • Choose the right chicken wings: Look for fresh, plump chicken wings with no bruises or discoloration.
  • Dry the chicken wings thoroughly: Pat the chicken wings dry with paper towels before cooking to help the seasoning stick and to prevent splattering.
  • Use a good quality Cajun seasoning: A well-balanced Cajun seasoning will give your wings the perfect flavor. Look for a blend that includes paprika, garlic powder, onion powder, cayenne pepper, black pepper, and white pepper.
  • Don't overcrowd the slow cooker: Cook the chicken wings in batches if necessary to avoid overcrowding the slow cooker. Overcrowding will prevent the wings from cooking evenly.
  • Cook the chicken wings on low for 6-8 hours or on high for 3-4 hours: The cooking time will depend on the size of your chicken wings and the temperature of your slow cooker. Use a meat thermometer to ensure that the chicken wings have reached an internal temperature of 165°F (74°C).
  • Make the buffalo sauce while the chicken wings are cooking: This will give the sauce time to develop its flavor. You can use your favorite buffalo sauce recipe or try the one included in this recipe.
  • Toss the cooked chicken wings in the buffalo sauce: Once the chicken wings are cooked, transfer them to a large bowl and toss them with the buffalo sauce. Serve immediately with your favorite dipping sauce.

Conclusion:

This crock-pot Cajun-style buffalo wings recipe is an easy and delicious way to enjoy classic American comfort food. The chicken wings are cooked in a slow cooker until they are fall-off-the-bone tender, then tossed in a flavorful buffalo sauce. Serve with your favorite dipping sauce and enjoy!
