Categories     Rice

Time 4h40m

Yield 4 serving(s)

Number Of Ingredients 9

1 1/2 lbs lean beef, cut in 1 inch cubes
1 (8 ounce) can crushed pineapple in juice, do not drain
1/2 cup water
1/2 cup low sodium soy sauce
1/4 cup brown sugar
1/4 teaspoon ground ginger
1/8-1/4 teaspoon garlic powder
1 tablespoon cornstarch
white rice or brown rice, cooked

Steps:

  • Add the pineapple with juice, water, soy sauce, sugar, & spices to a crock-pot.
  • Stir to melt the sugar then add in the beef cubes. Cover with a lid then cook on high for 4 hours.
  • Mix the cornstarch with 2 tbsp of cool water then stir into the sauce. Recover & cook for another 20-30 minutes, until the sauce thickens.
  • Serve over rice.

Tips:

  • Choose the right cut of beef: For this recipe, chuck roast or flank steak are both good options. They are both relatively inexpensive and will become tender and flavorful when cooked in the slow cooker.
  • Make sure to marinate the beef: The marinade helps to tenderize the beef and infuse it with flavor. Be sure to marinate the beef for at least 30 minutes, or up to overnight.
  • Use a good quality teriyaki sauce: The teriyaki sauce is the key to the flavor of this dish. Be sure to use a sauce that you enjoy the taste of.
  • Don't overcook the beef: Beef cooked in a slow cooker can easily become overcooked. Be sure to cook the beef on low for 6-8 hours, or until it is tender but not dry.
  • Add the broccoli in the last 30 minutes of cooking: This will help to keep the broccoli from getting too mushy.

Conclusion:

This crock pot beef teriyaki with broccoli is an easy and delicious meal that is perfect for a busy weeknight. The beef is tender and flavorful, and the broccoli is cooked to perfection. The teriyaki sauce adds a delicious sweetness and tanginess to the dish. This is a meal that the whole family will enjoy.
