This is the best beef stew I've ever made. It tastes great with a crunchy loaf of bread. I got this recipe from Real Simple (March 2004 edition). You'll need a 4 to 6 quart slow cooker. Browning the beef adds more flavor.

EASY CROCK POT BEEF STEW
This beef stew has a tomato based sauce, giving it a little different flavor. Cooked it up one day and got rave reviews from my husband, who is not a stew fan usually. It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!

CROCK POT CHICKEN (OR BEEF OR PORK) GREEN CHILE STEW
I have not made this recipe yet, but it is tried and true by a friend of mine, on another board, Marsha Tbay, a very reliable source. What I like about this recipe is that it is so versatile, you can use chicken, beef or pork to vary it. Personally, I would brown the meat first in a little oil then continue with the recipe. The 8-10 hours is the time it is cooking in the crock pot.

- Note: Comments from the person originally posted this: This is what we had for dinner tonight. It's delicious! The original recipe called for 2 pounds of beef round or chuck, cut in 1 inch pieces, but I substituted 5 boneless, skinless chicken breast halves, and it turned out fine.

BEEF STEW/ CHOLENT FOR CROCK POT
I worked on my stew recipe for several years before I perfected it to what it is today! Every time I serve this for Shabbat lunch, it's completely devoured. It's ultra simple and always comes out great. If you're making this for shabbos, cook it fully Friday afternoon and keep the crockpot on the "warm" setting until serving. You can also make the recipe by substituting one can of chicken stock with a can of beer.

CROCK POT BEEF VEGETABLE STEW
Description:I found a similar recipe to this one in a Canadian cookbook. I altered the vegetable and spices to suit our tastes. If one does not have the time or want to brown stew meat then a pound of cooked ground beef will do quite nicely. I usually serve with warm rolls or garlic bread.

CROCK POT CARNE GUISADA (MEXICAN BEEF STEW)
This was one of my mother-in-law's recipes and I just loved it. Of course she didn't even own a crock pot so everything was done "old school". I adapted her recipe to a crock pot version and it turns out similar to hers. Of course nobody can cook like or mothers and mother-in-laws but my husband let this pass. ;)

CROCK POT APPLE AND BEEF STEW
Every year we go to the orchard, and I have to find 5,000 things to do with apples. This is one of my favorites. Steps:
- In crock pot, mix beef broth and flour well.
- Stir in remaining ingredients.
- Cover and cook on low 10-12 hours, or high 4-6 hours.
Tips:
- Choose the right cut of beef. Chuck roast, rump roast, and brisket are commonly used and provide excellent flavor and texture when slow-cooked.
- Brown the beef before slow-cooking. This step enhances the flavor and color of the beef. Heat a large skillet over medium-high heat and sear the beef on all sides until browned.
- Use a heavy pot or Dutch oven. This will ensure even heat distribution and prevent the beef from scorching.
- Add vegetables and liquid. Common vegetables for beef stew include potatoes, carrots, celery, and onions. For the liquid, use beef broth, water, or a combination of both.
- Season the stew well. Use salt, pepper, garlic powder, onion powder, and other herbs and spices to taste.
- Cook the stew on low heat. This will allow the beef to become tender and the flavors to meld.
- Thicken the stew, if desired. You can use a cornstarch or flour slurry, or add mashed potatoes to thicken the stew.
- Serve the stew hot. Beef stew is a hearty and comforting meal that is perfect for a cold day.
Conclusion:
Crock-pot beef stew is an easy and flavorful dish that is perfect for a busy weeknight meal. With a few simple ingredients and a little time, you can have a delicious and hearty stew that the whole family will enjoy.
