2 lbs bottom round steaks, well trimmed and cut into 2 inch pieces
1/2 cup all-purpose flour
2/3 cup olive oil
2 large onions, diced
1 (6 ounce) can tomato paste
1 cup dry red wine
2 large potatoes, cut into 2 inch pieces
1/2 lb baby carrots
2 cups beef broth
1 tablespoon kosher salt
1 teaspoon dried thyme leaves
1 bay leaf
1 cup frozen peas, thawed

Steps:

  • Put the flour in a large Ziploc bag.
  • Add the beef and seal.
  • Toss to lightly coat the beef.
  • Heat a few tablespoons of the oil in a large skillet over medium-high heat.
  • Brown the meat in small batches, adding more oil as necessary.
  • Transfer to the slow cooker.
  • Add the onions to the skillet and cook over medium heat until tender, about 10 minutes.
  • Stir in the tomato paste and coat the onions then transfer to the slow cooker.
  • Pour the wine into the skillet and scrape up any browned bits and then add to the slow cooker.
  • Stir in the potatoes, carrots, broth, salt, thyme, and bay leaf.
  • Cover and cook on low heat for 7 1/2 hours or on high for 4 hours.
  • Add the peas and heat through before serving.

It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!

2 pounds chuck meat, cut into 1 1/2-inch cubes
1/4 cup flour
2 tablespoons olive oil
1/2 cup red wine
1 cup beef stock
2 bay leaves
1 tablespoon fresh thyme, minced
2 potatoes, peeled and cubed into 1 inch pieces
2 stalks celery, sliced
2 carrots, peeled and sliced
1 large onion, chopped into cubes
2 garlic cloves, minced
1 1/2 teaspoon kosher salt
1 15 oz can unsalted diced tomatoes

Steps:

  • Place the cubed meat and flour and in Ziploc bag, seal and shake until the pieces are fully coated with flour.
  • Heat 2 tbsp of olive oil in a large sauté pan over medium high heat and sear the pieces of meat for 4 minutes until all sides are nicely brown.
  • Remove the meat from the pan and place in the crock pot.
  • Add the red wine and stock to the sauté pan and bring to a boil for one minute, scraping off the bits of meat that have caramelized in the pan with a wooden spoon.
  • Add the reduced liquid to the crock pot along with the remaining ingredients and combine.
  • Cook on low for 6-8 hours.

2 lbs boneless beef chuck roast
4 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon ground pepper
2 medium onions, cubed
4 -6 carrots, sliced
2 stalks celery, sliced
2 large russet potatoes, cleaned and cut into in 1-inch cubes (no need to peel)
3 garlic cloves, minced
1 1/2 teaspoons Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon paprika
2 bay leaves
12 ounces beer (I used a lager)

Steps:

  • Place cut carrots, celery, onion and potatoes in the bottom of a large crock pot.
  • Mix tomato paste, garlic, paprika and Worcestershire sauce together in a small prep bowl and set aside.
  • Trim meat and cut into 1" cubes.
  • Place flour, salt and pepper into a large zipper lock bag. Add meat, seal bag and shake to coat.
  • In a large skillet heat 1 Tablespoon vegetable oil until hot. Add half of the meat and brown quickly on all sides. Be careful to separate the pieces. Transfer meat to the crock pot and brown the remaining pieces. Spoon the tomato paste mixture over the last batch of beef and stir well to coat. Cook about 1 minute longer then tranfer contents of skillet to the crock pot.
  • Add the bay leaves and pour the beer over everything. Cover and cook on low for 8-10 hours. (Note, this was fully cooked in my crock after 8 hours.).

  • Preparation:.
  • Combine the beef, carrots, onions, tomatoes, thyme, pepper, mustard, mushrooms, and wine or beef broth.
  • If you are using wine, use all the salt.
  • If you are using beef broth you might not need it depending on the saltiness of the broth so taste it to see.
  • Cover and cook on a low heat for 8 to 10 hours or a high heat for 4 or 5 hours.
  • The vegetables and beef will become tender.
  • Combine the flour and water and stir this slowly into the beef stew.
  • For Herb Dumplings.
  • Combine flour, baking powder, sage, rosemary, thyme, chives and salt in a bowl.
  • Cut in butter that's been kept at room temperature or use soft margarine.
  • Stir milk lightly into the flour mixture with a wooden spoon and adjust amounts to make sure that you have a moist dumpling dough.
  • Drop spoonfuls of the dough on to the hot beef stew, then cover allow to cook on high for 30 minutes or until a toothpick inserted into the herb dumplings comes out clean.
  • Do not overcook dumplings. Dumplings may disintegrate if left to cook too long.

  • 2. Drain juice from tomatoes into measuring cup.

4 teaspoons canola oil, divided
2 lbs bottom round steaks, trimmed of fat and cut into 1-inch cubes
3/4 lb cremini mushrooms or 3/4 lb white button mushrooms
3 tablespoons all-purpose flour
2 cups brown ale or 2 cups dark beer
4 large carrots, peeled and cut into 1-inch pieces
1 large onion, chopped
1 garlic clove, minced
1 1/2 tablespoons Dijon mustard
1 teaspoon caraway seed
3/4 teaspoon salt
1/2 teaspoon pepper, freshly ground
1 bay leaf

Steps:

  • Heat 2 tsp oil in a large skillet over medium heat.
  • Add half the beef and brown on all sides, turning frequently (about 5 minutes).
  • Transfer to a 6 quart crock pot.
  • Drain any fat from pan.
  • Add the remaining 2 tsp oil and brown the remaining beef.
  • Transfer to the crock pot.
  • Return the skillet to medium heat, add mushrooms and cook, stirring often, until they give off their liquid and it evaporates to a glaze (5-7 minutes).
  • Sprinkle flour over the mushrooms; cook undisturbed for 10 seconds, then stir and cook for 30 seconds more.
  • Pour in ale (or beer); bring to a boil, whisking constantly to reduce foaming, until thickened and bubbling (about 3 minutes).
  • Transfer the mushroom mixture to the crock pot.
  • Add carrots, onion, garlic, mustard, caraway seeds, salt, pepper and bay leaf to the crock pot.
  • Stir to combine.
  • Cover and cook on low until the beef is very tender, about 8 hours.
  • Discard bay leaf before serving.
  • ***To make ahead: Prepare though step 12 ; cover and refrigerate for up to one day before cooking in crock pot.
  • Serves 8.

2 teaspoons olive oil
12 ounces Italian sausage, cut into 1 chunks
12 ounces stewing beef, trimmed of fat
1 (14 1/2 ounce) can beef broth
2 tablespoons tomato paste
2 garlic cloves, mashed
5 -6 red potatoes, cubed (unpeeled)
10 ounces white mushrooms, quartered
2 stalks celery, finely chopped
2 beef bouillon cubes
1 teaspoon pepper
3/4 teaspoon salt (or to taste)
2 teaspoons oregano
1 head cauliflower, cored & cut into bite-sized pieces (about 4 cups)
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce (4 shakes)

Steps:

  • In a skillet, warm oil over medium heat, and saute meat until browned and thoroughly cooked.
  • Drain off fat and set aside.
  • In the crock pot, whisk together the broth and tomato paste.
  • Add all remaining ingredients and meat to the crock pot and stir.
  • Cover and cook until meat and veggies are tender (6-8 hours on LOW or 3-4 hours on HIGH).
  • Stir well before serving.

(Just make sure your diners are clear it's beef and APPLE stew, because, ya know, apples and POTATOES look very similar in stew, but the taste buds get a little freaked out if they're expecting the other;-)

2 lbs stewing beef
3 large apples, peeled and chopped into large pieces
4 medium carrots, chopped
1 large yellow onion, chopped
1 large garlic clove
1 1/2 cups beef broth
1 teaspoon Worcestershire sauce
1 teaspoon curry (or MORE, to taste)
2 tablespoons cider vinegar
1/2 cup flour

Steps:

  • In crock pot, mix beef broth and flour well.
  • Stir in remaining ingredients.
  • Cover and cook on low 10-12 hours, or high 4-6 hours.

Tips:
