Smoky Barbecue Beef Brisket (Crock Pot) image

This smoky flavored brisket is great for sandwiches or by itself. Start it before leaving the house in the morning and come home to a great meal.

2 -3 lbs fresh beef brisket
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon celery seed
1/8 teaspoon pepper
1/2 cup catsup
1/2 cup chili sauce
1/4 cup packed brown sugar
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 1/2 teaspoons liquid smoke
1/2 teaspoon dry mustard

Steps:

  • Trim fat from brisket. If necessary, cut to fit into crock pot.
  • Combine chili powder, garlic powder, celery seed and pepper; rub evenly over meat. Place meat in a 3 1/2-5 quart crock pot.
  • For sauce, combine catsup, chili sauce, brown sugar, vinegar, Worcestershire sauce, liquid smoke and dry mustard. Pour over brisket.
  • Cover; cook on low setting for 8 to 10 hours or on high for 4 to 5 hours. Remove meat from cooker. Cut the brisket into thin slices across the grain. Skim fat off juices in cooker; serve juices with meat.

3 lbs beef roast
1 cup barbecue sauce
1/4 cup honey
2 tablespoons Frank's red hot sauce
1 (12 ounce) bottle beer (I use Shiner Bock)

Steps:

  • Cook the roast on low, covered with the bottle of beer.
  • In the morning, drain the liquid out of the crock pot and shred the beef.
  • Combine the other ingredients and pour over the beef.
  • Keep the crock pot on low heat until ready to serve.
  • If you need to add liquid, add a little bit of water.

1 (3 lb) boneless beef chuck roast
1 teaspoon fresh ground black pepper
1 small onion, chopped
1 small red bell pepper, seeded and chopped (can use a green bell pepper)
1 cup barbecue sauce
1/2 cup apricot preserves
1 tablespoon fresh minced garlic
1 tablespoon Dijon mustard
1 tablespoon brown sugar
10 sandwich buns, sliced in half

Steps:

  • Cut the roast in quarters then place in the crock pot.
  • Sprinkle the roast with black pepper.
  • Sprinkle the chopped onion and bell pepper around the roast.
  • In a bowl combine the BBQ sauce with apricot preserves, garlic, Dijon mustard and brown sugar; pour over the roast.
  • Cover with lid and cook on LOW setting for about 6-8 hours or until the meat is tender.
  • Remove the roast and slice thinly, then return to the crock pot and stir with the sauce; cover and cook for another 30 minutes.
  • Skim the fat from the sauce.
  • Serve the sliced beef with the sauce on buns.

1 (5 1/2 ounce) can spicy vegetable juice
1/2 cup water
1/4 cup white vinegar
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1/2 cup packed brown sugar
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon paprika
1/4 teaspoon chili powder
1/8 teaspoon pepper
16 kaiser rolls, split

Steps:

1 garlic clove, minced
