Crock pot pepper steak is an easy homemade version of the classic Chinese American dish. Bell peppers and tender beef in a rich, thick sauce made with ginger, soy sauce and honey.

2 pounds sirloin (cut into 2-inch, by ½-inch strips)
2 teaspoons garlic powder
½ teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon canola oil (grapeseed oil, or a different neutral oil)
1 large yellow onion
¼ cup (plus 2 tablespoons water, divided)
2 green bell peppers (cored and cut into ½-inch strips)
2 red, yellow, or orange bell peppers (cored and cut into ½-inch strips)
1 15-ounce can fire roasted diced tomatoes in their juices
¼ cup low sodium soy sauce (plus additional to taste)
2 tablespoons Worcestershire sauce
2 tablespoons honey
1 tablespoon minced fresh ginger
¼ teaspoon red pepper flakes (plus additional to taste)
5 tablespoons cornstarch (divided)
Prepared brown rice (quinoa or cauliflower rice, for serving)

Steps:

  • Place the beef in a bowl and sprinkle with the garlic powder, salt, and black pepper. Toss to coat.
  • Heat the oil in a large skillet over medium high. Add the beef and cook on all sides until the beef is lightly browned, about 5 minutes (no need to cook it all the way through). Transfer the beef and any cooking juices to a 6-quart slow cooker.
  • To the skillet where you were just cooking the beef, add the onions. Increase the heat to high. Carefully pour in 1/4 cup water, stirring to scrape up any browned bits stuck on the pan. Sauté until the onions begin to soften and lightly brown and the liquid has cooked off, about 3 minutes, then transfer the onions to the slow cooker with the beef.
  • To the slow cooker, add the green and red bell peppers (see recipe note) and tomatoes. In a small bowl or a large liquid measuring cup, whisk together the soy sauce, Worcestershire sauce, honey, ginger, red pepper flakes, and 3 tablespoons cornstarch. Pour into the slow cooker.
  • Cover and cook on LOW for 6 to 7 hours, until the beef is tender (you can also make this recipe on HIGH, cooking it for 3 to 4 hours, though I find the beef comes out more tender on low heat).
  • In a small bowl, whisk together the remaining 2 tablespoons cornstarch with the remaining 2 tablespoons water to make a slurry. Stir the slurry into the slow cooker. Turn the slow cooker to HIGH and let cook, uncovered, for 10 minutes to further thicken. The pepper beef will still be saucy, but it should resemble a thick, rich gravy. Stir once more. Taste and add additional salt, soy sauce, and/or red pepper flakes to taste. Serve hot with prepared brown rice and a sprinkle of green onion.

Slow-cooked Italian beef for sandwiches. Provolone, Swiss, and Cheddar cheese are all delicious with this. My kids had hot Italian sandwiches on hoagies; I prefer mine over veggies like spaghetti squash or zoodles. Really, any veggies would work, as would mashed potatoes, rice, or grits. Don't forget to add the cheese on top if you're not doing sandwiches...it's absolutely heavenly without the bread, as well.

1 (3 pound) beef chuck roast
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
2 cups beef broth
1 tablespoon Worcestershire sauce
1 cup crushed tomatoes
10 pepperoncini peppers plus a splash of their juice
4 cloves garlic, chopped
1 tablespoon Italian seasoning, or more to taste
3 green bell peppers, chopped
1 onion, chopped
12 hoagie rolls, split lengthwise
12 slices provolone cheese, or as needed

Steps:

  • Season roast liberally with onion powder, garlic powder, salt, and pepper on all sides.
  • Heat a pan over medium-high heat until scorching hot. Add olive oil. Sear beef until brown on all sides, holding up roast to get all edges, 5 to 10 minutes. Transfer roast to the slow cooker. Deglaze the pan by pouring in broth and scraping up browned bits. Add Worcestershire sauce. Pour mixture over the roast in the slow cooker.
  • Add tomatoes, pepperoncini peppers and their juice, garlic, and Italian seasoning to the slow cooker. Turn roast over a few times to coat. Cover slow cooker and cook on High power for 4 hours.
  • Add green bell peppers and onion to the slow cooker, tossing to incorporate. Continue cooking on High power 1 more hour.
  • Shred beef and season with salt and pepper to taste. Let beef and sauce sit in the slow cooker on Warm until ready to serve.
  • Meanwhile, toast hoagie rolls, if desired. Top rolls with shredded beef and add provolone cheese to each.

2 lbs lean round steak
2 green peppers, sliced thin
1 small onion, chopped fine
1 cup beef broth
2 tablespoons low sodium soy sauce
1 teaspoon ground ginger
2 garlic cloves, minced
1 teaspoon Worcestershire sauce

Steps:

  • Cut the steak into serving size pieces. If desired, you can brown the meat in a little hot oil before adding to crockpot.
  • Place the thinly sliced pepper rings in bottom of crockpot, reserving a few to place on top of meat if desired.
  • Arrange the meat on peppers evenly, carful not to stack one piece directly on top of another.
  • Mix all other ingredients and pour over meat and peppers.
  • Cover and cook on low for 8-10 hours, or on high for about 4 hours.
  • Serve with mashed potatoes and/or steamed veggies.

2 pounds beef sirloin, cut into 2 inch strips
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch
½ cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.
