This is a great recipe to start in the morning and have ready when you come home. I love the packages with 16 kinds of beans...they make the best bean soup. They don't come with a prepackaged mix or anything like it sounds--the 16 bean soup mix is just a package of 16 kinds of beans. I didn't have turkey Italian sausage so I used regular spicy Italian sausage, and I added a couple potatoes just because I love them. Recipe is posted as written. Serving size is estimated. 16 ounces beans (16 bean soup mix)
3 bay leaves
1 tablespoon oregano, crushed
28 ounces chicken stock (non-fat)
water
3 stalks celery, chopped
3 carrots, diced
1 onion, chopped (large)
3 garlic cloves, sliced
1 lb Italian sausage, sliced (turkey)
29 ounces tomatoes (stewed or diced)

Steps:

  • Combine bean soup mix, bay leaves, oregano, chicken stock, and enough water to cover the beans by 1" to 2 " in crock pot.
  • Cook on high for 2 hours.
  • Add remaining ingredients and shift cooker to low. Cook for additional 3 hours.
  • For more zing, add cayenne or crushed red pepper when adding second set of ingredients.
  • Serve this as a complete meal or over rice if desired.
  • Freezes well.

This is a soup that we usually had at Christmas. It was pretty much a staple on the menu since I was a kid and I have kept it on the menu for my family all of these years. However, we like it any time the weather is cool and we want something to warm our insides.

6 c fresh, trimmed, whole or cut green beans (@ 2 lbs) can use 2 (16 oz) bags frozen cut or whole green beans
4 - 6 medium red-skinned potatoes, scrubbed and sliced 1/4-inch thick
1 large onion, sliced
8 slice bacon, cut into pieces
salt and pepper to taste
2 can(s) cream of potato soup
1 soup can of water
3 Tbsp butter or margerine

Steps:

  • 1. Spray the Crockpot with cooking spray.
  • 2. Layer sliced potatoes, sliced onion, green beans and bacon, sprinkling with salt and pepper as you go.
  • 3. In a medium bowl, add soup and water and whisk until smooth. Pour over mixture in crockpot.
  • 4. Dot with butter, about 3 tablespoon total.
  • 5. Cover and cook on low for 6 to 8 hours or until potatoes are tender..
  • 6. Taste and adjust seasonings.
  • 7. VARIATIONS: Replace the green beans and bacon with , 2 cans whole kernel corn, drained and 2 cups cubed ham; or 2 cans sweet peas, drained and a dozen or so pearl onions instead of the large chopped onion.

I was looking for something to try my packet of Willie's beans and peas seasoning on. We had this tonight and it was wonderful.

1 pkg willie's beans and peas seasoning packet
1 c pinto beans, dry
1 c split peas, dry
1 medium onion, chopped
1/2 a green pepper, diced
2 c chopped bok choy (green and white parts)
1 c spinach, fresh, chopped
2 Tbsp garlic, heaping
salt and pepper to taste

Steps:

  • 1. Put the pinto beans and the peas into a bowl and pour over them at least 2 times as much water and let it sit 4 hours.
  • 2. Take that and pour into a crock pot. Add the rest of the ingredients minus the spinach and the bok choy. Add 3 or so more cups of water. cook on low for 6 hours. Add the bok choy and the spinach cook two more hours and serve.

I served it over well-toasted garlic bread with a salad and sliced cantaloupe on the side. Healthy, low carb, simple and impressive.

8 chicken tenderloins
15 ounces white beans, drained and rinsed
4 cups baby spinach leaves, well-rinsed
15 ounces fat free chicken broth
1 cup red onion, sliced
2 tablespoons garlic, minced
1/2 cup parmesan cheese
1 teaspoon dried rosemary
1 tablespoon dried Italian seasoning

Steps:

  • Slice the onion.
  • Mince the garlic.
  • Drain and rinse the beans.
  • Clean the spinach.
  • Layer the onion, garlic, beans and spinach in the bottom of the crock pot.
  • Pour the chicken broth over the ingredients. Make sure the spinach is submerged in the chicken broth.
  • Place the chicken on top of the ingredients.
  • Season well with salt, pepper, rosemary and italian seasoning.
  • Sprinkle the parmesan cheese over all ingredients.
  • Cook on low for 6 to 8 hours.
  • Serve over toasted garlic bread.

I had a ham shank and some greens that I wanted to use up, but I was also on my way to work so I wanted it to be something I could cook in my slow cooker. After combining bits and pieces of other recipes, this is what I came up with. We ended up loving it so I decided to post it for safekeeping.

1 ham shank (it has more meat than a hock)
1 (14 1/2 ounce) can great northern beans
1 cup yellow onion, chopped
3/4 cup carrot, diced
3/4 cup celery, diced
1 teaspoon hot sauce (more or less to taste)
1 teaspoon dried chipotle powder (chipotle chile powder)
1 1/2 teaspoons dried thyme
1 teaspoon smoked paprika
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
2 bay leaves
6 garlic cloves, minced
1/2 cup dry white wine
28 ounces chicken stock (which is 2 cans worth)
8 ounces collard greens, which is about 3 to 4 loosely packed cups, I actually used a prechopped mix that had collard, turnip
salt and pepper (to taste)

Steps:

  • Place smoked ham shank in crock pot.
  • Open can of beans and rinse thoroughly. Place beans in a large bowl.
  • Combine all of the ingredients with the beans (except for salt and pepper) and mix thoroughly. Pour over ham shank.
  • Cover and cook on low for 7 - 8 hours. Remove ham shank from crock. Discard skin, fat and bone. Chop up remaining ham and put back into the crock. Add salt and pepper to taste and adjust any seasoning (more thyme, tobasco, paprika, etc). After adjusting I like to finish off by putting the cover back on and cooking for an additional 30 min on high just to let the adjusted flavor meld together. Remove bay leaves and discard. Portion into four bowls.
  • I had a multigrain baguette that I cut into slices. I smeared each slice with a thin layer of goat cheese and we ate that with it. But I bet cornbread would be equally delicious.

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

2 pounds fresh green beans, rinsed and trimmed
1 large onion, chopped
3 ham hocks
1 ½ pounds new potatoes, quartered
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt
1 tablespoon chicken bouillon granules
ground black pepper to taste

Steps:

  • Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
  • Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
  • To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.
