- Sort beans and soak in enough water to cover overnight.
- Or you may sort them and place in a saucepan with 2-inches of water to cover.
- Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
- Allow to sit for one hour after boiling (don't lift the lid).
- Whichever method you use, rinse and drain the beans before placing them in the crock pot.
- Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
- Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
- Skim any excess fat, if necessary, before serving.
CROCK POT PINTO BEANS
This is a really good and easy slow cooker recipe for pinto beans, it's really good with some fresh cornbread on the side. One of my favorites!! You can add the jalapenos to your taste. We like it with a little kick but it's just as good without them.

- Put them into a large bowl and cover with hot water and let sit over night.This helps cut down on cooking time and take some of the "gas" out. They will swell quite a bit so you need a large bowl.
- In the morning, rinse beans well with cool water, drain and then put in crock pot.
- Add chicken broth and all other ingredients.
- Fill with water till water is about an inch or 2 above beans.
- Cook on low all day for about 8-9 hours.

- Rinse dry beans in cold water. Place in a lg. bowl, and cover with 2" of cold water. Let soak overnight in refrigerator. Drain, and rinse beans.
- Put beans in a lg. crock pot with the rest of the ingredients. Cook on high 12-14 hours or on low for 24 hrs., or until beans are soft, and juice is thick. Stir occasionally.
- Check water occasionally to make sure there is enough water in the beans, so they don't boil dry.

- If you use a smaller size crock pot cut the recipe in 1/2, and cook until beans are done. I always use my large crock pot, so I'm not sure how long it takes.
THREE-BEAN BAKED BEANS (OVEN OR CROCK POT)
This is my summer time dish for all BBQ's and I always double the recipe. If you enjoy baked beans you have to try this one. It's from a '98 TOH and whenever I make it someone always asks for the recipe. I have personally never made it in the oven since the crock pot does just fine and who wants to heat up the house in the summer? When using the crock pot I will take the lid off for the last hour or so (+/-) of cooking - this will thicken it up if you like your beans thick right at serving. Leftovers freeze very well.

- Rinse and sort thru beans (has anyone ever really found a rock in these?). Cover with water and let sit overnight.
- In the morning, drain water, rinse again and place beans in the crockpot. Dump in all of the other ingredients (except ham bone) and give it a few good stirs.
- Put the ham bone in the crockpot, cover and cook on high for 6-8 hours.
- Remove the bay leaf, ham bone and fish out any bones that may have fallen off during cooking. Stir the beans a few times. Remove 1 cup of the beans and place in a bowl, mash them with a potato masher or back of a spoon, then return to the beans and stir; this helps thicken it up a bit.
- Take off any meat left on the ham bone, chop and return it to the crockpot.
- Stir again and serve!

- Soak the beans for at least 8 hours. If they are old, 24 hours is great. You must change the water at least 3 times to rinse the white foam that appears in the surface.
- Pour the beans in the crock pot with the water, the bay leaves, the onion and garlic. (Cut in half the garlic cloves to take out the stem that germinates so it is nicer for your tummy, you can plant the stem or just through it away).
- Cook on high for 12-15 hours. Check the amount of water around the 8th hour and fill again if necessary.
- Turn of the crock pot and add the salt, stir softly and let it rest for at least 30 minute.

- Fry the bacon until it starts to brown, then put it into the crock pot.
- In the bacon drippings, brown the ground beef.
- Put the ground beef, beans, crushed tomatoes, tomato paste, onions, chili powder (In Southern California we have a great variety available, but Gebhardt's would work), and the cayenne into the crock pot with the beef broth.
- Cut the stems off the fresh jalapenos and cut them in two or three chunks.
- place the peppers along with the garlic and whole fresh tomatoes into a food processor and puree the three ingredients.
- Put this into the crock pot, stir to mix and let it all cook for 10-12 hours on low or 5-6 hours on high.
- By making a puree out to of the peppers and garlic, you get a more evenly dispersed blend.
- I used the tomatoes to give some moisture to the puree.
- Serrano chilies are three times hotter than jalapenos so don't let their small size fool you.
