A crock pot version of 13 bean soup. Super easy & super yummy! I buy the 13 bean soup mix in the bulk section of my supermarket. It contains the 13 varieties of dry beans as follows: Baby limas, large limas, garbanzo, great northern, black-eyed peas, navy, black, red pinto, red lentils, green lentils, yellow splits, green splits, and kidney beans. Even my toddler had fun eating this soup. It was almost like watching a kid sort their M&M candies into colors! We took the opportunity to teach her the name of each bean as she picked it out to eat. Be sure to plan ahead, as the beans need to soak overnight or for 8 hours before cooking. (Cook time noted includes soaking time.) *Update December 2011: Since hosting the January 2011 Soupfest tag game in the Topic of the Month forum I have been using Sharon123's recipe for homemade Herb & Garlic broth (link in ingredients section) instead of just plain water as the soup base. It's absolutely delicious and so easy to make and store in the freezer. Feel free to use that recipe or any other broth for some or all of the water in the soup (not for soaking the beans).

bean soup mix (2 cups of 13 bean soup mix)
6 cups water
1 cup ham, cooked & diced
2 leeks, sliced (white part only)
2 garlic cloves, minced
2 carrots, chopped (or 8 baby carrots cut in thirds)
2 stalks celery, sliced
1 teaspoon basil
1 teaspoon thyme
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
6 cups water (*or substitute some broth for part of the water. I always keep some Herb and Garlic Broth-Aigo Bouido in the freezer an)

Steps:

  • Place beans in a colander and sort through them, picking out any rocks or debris. Rinse the beans with water and then drain the water away.
  • Place beans in crock pot and add the 6 cups of water. Put the lid on the crock pot (but don't turn it on) and leave the beans to soak in the cold water overnight or for at least 8 hours.
  • Pour the beans and water into the colander. Rinse gently, drain and return beans to the crock pot.
  • Add the rest of the ingredients to the crock pot and stir to combine.
  • Set the crock pot on LOW and cook for 3-5 hours or until beans and veggies are soft.
  • Serve with fresh garlic bread and enjoy!

Title says it all. Put this it together using a little bit from this recipe and a little bit from that recipe but mostly suggestions from my Mom. Tip I learned from someone else on Zaar was to add the salt at the very end of the cooking time, otherwise the beans get tough. You could also add 3/4 cup celery if you like celery in your soup, or saute the carrots and onion before putting them in the Crock Pot if you like the flavor from that, too.

1 lb dried great northern beans, separated, soaked, and rinsed
3/4 cup carrot, chopped
1/2 cup onion, chopped
6 cups chicken broth (or substitute 2 cups of pan drippings if you have them, so 2 cups ham drippings and 4 cups chicken b)
2 cups cooked ham, diced or shredded
1/2 teaspoon ground thyme (or more to taste)
1/2 teaspoon basil (or more to taste)
1 teaspoon ground black pepper
1 bay leaf
salt (I use sea salt)

Steps:

  • Place the soaked and rinsed beans in a 5- or 6-quart crock pot. Look them over one more time for any bad beans or foreign matter.
  • Add chopped carrots and onion.
  • Pour chicken broth (pan drippings/chicken broth combination if you're using it) over beans, carrots, and onion. Mix gently.
  • Add ham and stir again.
  • Throw in ground thyme, basil, and ground black pepper. (Measurements in ingredients section are a guesstimate, I hardly ever use measuring spoons when cooking, I just make a cup in my hand and eyeball it.) To my tastebuds, a little thyme goes a long way so you may wish to add more than 1/2 teaspoon. Stir again.
  • Add bay leaf and push it gently under the surface of the broth so it doesn't float.
  • Cook on high for 1 hour, then low for 8 hours, stirring once in a while if you can. You could probably just cook on low for 8-9 hours if there's nobody home to change the setting. I just like to get things heated up and moving so I do high for an hour on just about everything I put in a Crock Pot.
  • Remove the bay leaf.
  • Add salt just before serving to the whole pot or individual bowls.
  • This may taste good with a drop of Dijon mustard in individual bowls or even a tablespoon or two of cream.
  • If it's too thin, just take the lid off for a while.

1 teaspoon dried sage

2 lb dry northern beans
1 hambone w/ meat or 2 ham hocks
extra ham, chopped of not a lot on your bone or hocks ( i didn't have a lot of ham on my bone, so added cubed ham i had in the freezer)
2 carrots, sliced
2 sweet onions, chopped
2 stalk(s) celery, sliced
6 clove garlic, sliced
2 bay leaves
1/2 - 1 Tbsp dried thyme
1 tsp pepper
1 tsp onion powder
2 Tbsp chopped parsley
1/2 tsp ground cloves
6 c chicken broth
5 c water
2 Tbsp chicken bouillon paste
taste before adding salt at the end

Steps:

  • 1. Place your beans in a large bowl; cover with water and soak overnight. After soaking, pick through and discard any stones or shriveled beans. Rinse thoroughly and place in an 8 quart crock pot. Add all remaining ingredients except for the chopped ham, unless you aren't using a bone. I just use the bone and its meat for cooking, then add other cubed ham at the end.
  • 2. Once all ingredients are added; stir as best as you can - mainly to mix in the bouillon. Place on the lid. Turn pot on low and cook for 6 - 8 hours or on high for 4 - 5 1/2 hours; or until the bean are creamy. All pots cook differently. I started mine on low for the first 4 hours, then turned to high for another 3 1/2 hours...was perfect..

I played with the spices some as it was rather bland the original way. I serve this kind of gumbo style with a scoop of cooked rice put into the bowls before I add the soup.

1 large sweet onion, diced
3 stalks celery, diced
1 small green pepper, diced

1 bay leaf
2 teaspoons cajun seasoning

Steps:

  • Melt butter in large saucepan. Add onion, garlic, celery and green pepper. Cook and stir for five minutes. Place in slow cooker.
  • Add broth, ham or ham hock, beans, bay leaf and other seasonings. Cover and cook on high for two hours.
  • Remove ham hock if you used it. Cut off what meat you can and add it to the crock pot. Add parsnips or white potatoes and sweet potato. Cover and cook for an additional two hours.
  • Add sausage. Cover and cook for an additional 30 minutes or until heated through. Discard bay leaf. Salt and pepper to taste and serve with rice.

SOUTHWESTERN CHICKEN AND BEAN SOUP (CROCK POT)

This soup has a good chili flavor and is simple to pull together even when the refrigerator is looking pretty bare. I do substitute fresh ingredients when I have them and the time to prepare them, but I list canned ones here for convenience (and they do taste pretty good anyhow!). I leave the seeds in my chili pepper, but take them out if you want a milder taste, and adjust the seasonings accordingly as well. This soup is very flexible - it's a good way to use up leftover chicken, beans and corn, and I believe you could use ground beef or turkey or TVP in this just as easily as chicken breast. I found a 6 can soup recipe on the web, but I altered it so much that it became something new, and this is the result.

1 (28 ounce) can peeled and diced tomatoes
2 tablespoons chili powder

3 tablespoons red wine vinegar
1 tablespoon salt
1/2 cup uncooked white rice or 1/2 cup brown rice

Steps:

  • Soak beans overnight in water to cover.
  • If you don't soak the beans overnight:.
  • In a large pot over medium heat, place the beans in three times their volume of water.
  • Bring to a boil and let boil 10 minutes.
  • Cover, remove from heat and let stand 1 hour.
  • Drain and rinse.
  • In a crock pot, combine soaked beans and 1 1/2 quarts fresh water.
  • Cook for 3-7 hours on high, depending on how hot your cooker gets.
  • Stir in carrot, celery, onion, garlic, bell pepper, jalapeno, lentils and tomatoes.
  • Season with chili powder, cumin, oregano, black pepper, red wine vinegar and salt.
  • Cook on low, 2 to 3 hours.
  • Stir the rice into the crock pot in the last 20 minutes of cooking (if using brown rice add the last 1 hour).
  • Puree half the soup with a blender or food processor, then pour back into the pot before serving.

2 -3 slices bacon, cooked until the fat is rendered but not crispy

  • Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours.

  • Stir together flour, cornmeal, baking powder, and pepper in a medium sized bowl.

1 lb dried lima beans
3 carrots, cut up
1 large onion, coarse chopped
2 large celery ribs, cut up
1 large garlic clove, chopped
8 cups water or 8 cups chicken broth
1 bay leaf
1 whole chicken breast, bone in cut in half

fresh cracked black pepper
extra virgin olive oil

Steps:

  • In a crock pot place all ingredients expect salt, pepper and olive oil.
  • Cover and cook low until a boil, This may be several hours. Turn to high and cook until beans are very soft which may be 1 or 2 hours more.
  • When done, discard bay leaf. Carefully remove chicken from the bone and shred and return meat into the pot.
  • Season with salt and pepper. Drizzle olive oil over soup in each serving bowl. Tastes better with age.

It's a light soup, not heavy with tomatoes or cream, which was perfect for a family of 4 all feeling under the weather. My family really enjoyed it. I hope you do too!

1 small onion, chopped (about 1 cup)
6 small potatoes, cut into bite-sized pieces (about 4-1/2 cups)
2 (15 1/4 ounce) cans lima beans
2 cups ham, cut into bite-sized pieces (or a bag of pre-packaged cubed ham)
32 ounces chicken broth
1/4 teaspoon pepper
1/2 teaspoon celery salt
1/2 teaspoon salt

Steps:

1 lb dry black beans, rinsed and drained
2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies
8 ounces cod, cut into 1 inch pieces
1/2 cup onion, minced
2 garlic cloves, minced
2 tablespoons red wine vinegar
1 teaspoon dried oregano

Steps:

  • Place beans in a 6 quart slow cooker.
  • Add water to cover the beans by 4-5 inches.

1 pkg cajun 15 bean soup ( dry beans)
1 onion chopped
2 stalk celery, chopped
1 ham hock
4 links andouille sausage, sliced
2 clove garlic, minced
1 Tbsp tony chacheres creole seasoning
1 -2 Tbsp balsamic vinegar
1 can(s) chicken stock
water to cover beans

Steps:

  • 1. In a medium sized bowl, soak the beans for 2 hours, sort and drain. In the crock pot; place beans, chicken stock, onion, celery, garlic, ham hock, seasoning packet for beans. Pour enough water to cover the beans Set heat to high, cook 6 hours or until tender.
  • 2. About an hour before the beans are cooked; remove the ham hock. Pull any meat from the hock and add it to the beans. Add the sliced sausage, creole seasoning, and balsamic vinegar. Stir well.
  • 3. Enjoy!! This soup is deliciously spicy..

I just love this bean soup recipe , my mom taught me how to make this years ago but I have changed it a bit to fit my tastes. You can make this soup with different types of beans if you prefer too. This soup can be made on the stove top too if you don't have a crock-pot.

1 lb small navy beans (or your favorite bean)
1 onion ; chopped
2 stick celery ; chopped
3/4 c chopped carrots
2 Tbsp chopped garlic from a jar
1/2 tsp pepper
2 bay leaves, dried
leftover ham bone with meat on it
1-1/2 c chopped up ham ; optional
4-5 c water
broth from the cooked ham
3 Tbsp fat from ham broth

Steps:

  • 1. Sort through the dry beans and dis-guard any bad beans or rocks you may find. Place in water and soak over night with 2 teaspoons of baking soda.
  • 2. Drain and rinse the beans well.
  • 3. Chop the onions , carrots and celery , I like to use some of the celery leaves in mine.
  • 4. Place cut vegetables in a crock-pot with the beans and Add a meaty ham bone that was left over from a previous dinner and extra chopped up ham meat if you want more meat.
  • 5. Add the left over juice and some of the fat from the cooked ham , it will be jelled once it's cold.
  • 6. Add the water and the remaining spices.
  • 7. Cover and let cook for atleast 6 hours and remove the ham bone and remove the ham off the bone and return the meat to the soup ; I like to mash some of the beans at this time , Cook for 2 more hours.
  • 8. I like to serve my soup with some good ole corn bread....yummy...enjoy!!

Tips:

  • Select dried beans that are whole, unblemished, and free from discoloration.
  • Soak the beans overnight in a large bowl or pot, covered with cold water. This will help to reduce the cooking time and improve the texture of the soup.
  • If you don't have time to soak the beans overnight, you can quick-soak them by bringing them to a boil in a large pot of water. Reduce the heat to low, cover, and simmer for 1 hour. Remove the pot from the heat and let the beans soak for 1 hour, or until they are tender.
  • Use a slow cooker with a capacity of at least 6 quarts.
  • Add the beans, water, onion, garlic, and spices to the slow cooker. Cover and cook on low for 8-10 hours, or on high for 4-6 hours.
  • Once the beans are tender, add the vegetables and cook for an additional 30 minutes, or until the vegetables are cooked through.
  • Season the soup with salt and pepper to taste.
  • Serve the soup hot, garnished with chopped parsley or cilantro.
