Steps:

  • Heat oven to 350°F. In large roasting pan, melt butter in oven.
  • In large resealable food-storage plastic bag, mix flour and taco seasoning mix. Add chicken wings, a few at a time; shake to coat evenly. Place chicken in pan, turning each to coat with butter.

1/2 c all purpose flour
1 pkg taco seasoning - i use hot
2 1/2 lb chicken wingettes and drummettes
1/2 c butter, melted
1 3/4 c crushed, corn chips

Steps:

  • 1. In a large shallow bowl, combine flour and taco seasoning. Add wings, a few at a time, and coat. Place butter and corn chips in separate shallow bowls. Dip wings in butter, then coat with chips. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 350° for 30-40 minutes or until juices run clear.

2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

1 (5-pound) package chicken wings
2 quarts buttermilk
1/4 cup hot sauce
Canola oil, for frying
3 cups all-purpose flour
1 tablespoon poultry seasoning
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
1/2 teaspoon chili powder
Salt and freshly ground black pepper

Steps:

  • Rinse and pat dry the chicken wings. Scatter the wings in a single layer in a shallow pan or bowl. Mix together the buttermilk and hot sauce in a large bowl and pour over the top of the chicken wings to coat completely. Cover and refrigerate at least 2 hours and up to 5 hours.
  • Using a deep-fryer or a large heavy-bottomed pot heat enough oil to come halfway up the sides of the pot.
