SESAME ORANGE SHRIMP

Sesame Orange Shrimp image

Using egg whites instead of whole eggs (or yolks) in the batter creates a crispier coating; cooking the shrimp in batches (so as not to crowd the pan) also helps. This versatile recipe is equally delicious when prepared with sliced chicken breast, pork loin, or steak.

SESAME SHRIMP

Sesame Shrimp image

Sesame Shrimp, coated in fragrant sesame seeds and quickly seared in a tiny bit of sesame oil, are full of flavor and very low in fat.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 6

4 tablespoons sesame seeds
1 to 2 tablespoons dark sesame oil
1 to 2 tablespoons rice vinegar
2 to 3 tablespoons low-sodium soy sauce
12 large shrimp, peeled and deveined, tail portion of shell removed
Four 6-inch bamboo skewers

Steps:

  • In a small skillet over medium heat, toast the sesame seeds until fragrant. In a shallow dish, combine 2 tablespoons of the sesame seeds with the sesame oil, vinegar, and soy sauce. Thread 3 shrimp onto each skewer, piercing each at the head and tail, and place in the marinade. Turn to coat and set aside for 10 minutes.
  • Spread the remaining 2 tablespoons of sesame seeds on a plate. Transfer the skewers to the plate and coat with the sesame seeds. Heat the skillet over medium-high heat and sear the skewered shrimp for 2 to 3 minutes per side, or until opaque. Pour the remaining marinade over the shrimp and cook until the marinade thickens.
  • Place the skewers on a plate and pour the marinade over. Serve warm or at room temperature.

Tips:

  • Keep the shrimp cold: Cold shrimp will help the batter adhere better and result in a crispier texture.
  • Use cornstarch for a crispy coating: Cornstarch is a key ingredient in achieving a crispy coating. It helps absorb moisture and create a barrier between the shrimp and the batter.
  • Double-coat the shrimp: Double-coating the shrimp ensures that the batter is evenly distributed and helps create a more flavorful and crispy coating.
  • Fry the shrimp in hot oil: The oil should be hot enough to immediately start frying the shrimp. This will help prevent the shrimp from becoming greasy.
  • Do not overcrowd the pan: Overcrowding the pan will lower the oil temperature and result in soggy shrimp.
  • Drain the shrimp on paper towels: Draining the shrimp on paper towels helps remove excess oil and makes them less greasy.
  • Serve the shrimp immediately: Sesame shrimp is best served immediately after frying, while it is still hot and crispy.

Conclusion:

This crispy sesame shrimp recipe is a delicious and easy-to-make appetizer or main course. The shrimp are coated in a flavorful batter and fried until golden brown and crispy. The sesame seeds add a nutty flavor and extra crunch. Serve the shrimp with your favorite dipping sauce and enjoy!
