1/2 cup coarsely grated (not ground) Parmesan
4 eggs

3 slices white bread (preferably from a good, crusty loaf)
2 tablespoons fresh oregano leaves
Kosher salt
3 tablespoons extra-virgin olive oil
1/3 cup grated Parmesan
1/4 teaspoon crushed red pepper flakes
2 cloves garlic, minced
1/2 onion, finely chopped
One 28-ounce can crushed tomatoes
6 large eggs
1 cup Greek yogurt
1 tablespoon minced fresh oregano
1 teaspoon ground cumin
Pinch crushed red pepper flakes
Zest and juice of 1/2 lemon
Kosher salt and freshly ground black pepper

Steps:

  • For the eggs in purgatory: Pulse the bread in a food processor until finely ground. Add the oregano and a pinch of salt and process until the herbs are finely chopped. Add 1 tablespoon of the olive oil and pulse until incorporated.
  • Heat a large nonstick skillet over medium-high heat. Add the crumbs and toast, stirring, until golden, about 5 minutes. Transfer to a bowl and stir in the Parmesan.
