12 square wonton wrappers
1 medium red onion
1/2 teaspoon chopped fresh ginger
2 teaspoons spicy brown mustard
2 teaspoons red wine vinegar
1/8 teaspoon crushed red pepper flakes
1 tablespoon canola oil
Kosher salt and freshly ground black pepper
1 (5-ounce) can chunk light tuna, drained
1 1/2 cups snow peas

Steps:

  • Preheat the oven to 375 degrees F. Coat a 12-cup mini muffin tin with nonstick cooking spray.
  • Place 1 wonton wrapper into each cup. Press the wontons into the cups with your fingers and spray each wrapper with cooking spray. Bake until they are golden brown, 5 to 6 minutes. Remove from the oven and let cool.

WASABI CREAM
1/4 mayonnaise
1 T fresh lime juice
1 T prepared wasabi
NORI WONTONS
24 (3inch) square wonton wrappers, cut in half
1 (7 inch) sheet nori, cut into 48 (1 inch) squares
2 egg whites, beaten
3 to 4 cups canola oil for deep frying
BARELY SEARED TUNA
12 oz sushi quality tuna steak, cut into 1/4 inchdice
1/2 cup thinly sliced scallions
1 T soy sauce
1 T dry vermouth
2 T fresh ginger root, minced
1 medium garlic clove, minced
1/4 tsp salt
1 T canola oil
1 T sesame seeds, toasted

Steps:

  • to make the wasabi cream: In a small bowl, combine mayonnaise, lime juice and wasabi. Taste and add more wasabi or lime juice if necessary. (Can be prepared one day ahead, cover, chill) To make crispy nori wontons: Using a pastry brush, bruch centerof each wonton rectangle with egg white and top with a nori square. Heat oil in a deep, heavy bottomed pot to 374 degrees. Working in small batches, gently place nori wontons into oil and fry for about 30 seconds, until wontons are golden and noris form shallow pockets. Remove nori wontons from oil with slotted spoon. Drain on paper towels. Repeat until all wontons are fried. If preparing ahead, store in airtight container for up to 1 day. To prepare tuna: in a medium bowl, combine diced tuna with scallions, soy sauce, vermouth, ginger root, garlic and salt. In nonstick skillet set over high heat, heat 1 T oil until it just begins to smoke. pour tuna mixture into oil and quickly toss with spatula for about 30 seconds, until tuna is lightly cooked and shows a deep caramel color in some spots but is still pink in others. To assemble individual crisps, check nori wontons first. If they are limp, place on a baking sheet, bake at 400F for a few minutes and let cool. Place 1 tsp tuna mixture into each nori wonton and top each with wasabi cream. Sprinkle with sesame seeds. Serve immediately. S

2 ounces sashimi grade ahi tuna, diced
2 ounces Mango Jicama Salsa, recipe follows
1-ounce Sweet Soy Sauce, recipe follows
2 ounces Wasabi Cream, recipe follows
3 ounces pea shoots
1-ounce eel sauce
1 cup mango, peeled and cut into 1/4-inch cubes
1/4 cup jicama, peeled and small diced
1/4 cup (1/4-inch) diced red onion
1 tablespoon finely chopped cilantro leaves
1 tablespoon sweet chili sauce
1 teaspoon seeded and finely diced jalapeno
1/4 teaspoon fine sea salt
1 cup soy sauce
2 tablespoons sesame oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1/2 teaspoon chili flakes
1/4 teaspoon wasabi powder
1 cup heavy cream
2 tablespoons sour cream
2 tablespoons wasabi powder
2 tablespoons rice vinegar
2 tablespoons sugar
1 teaspoon freshly squeezed lemon juice
1/4 teaspoon fine sea salt

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat the canola oil to 360 degrees F. Fold the pot sticker skins to create a taco shape and fry in the canola oil. Set aside to cool.
  • In a small bowl, gently toss the tuna, Mango Jicama Salsa and Sweet Soy Sauce. Fill each taco shell with 1/4 of the mixture, and finish with a 1/2-ounce drizzle of the Wasabi Cream.

  • In a small bowl, gently stir all of the ingredients together. Allow the flavors to marry for 20 minutes before serving.
