Time 45m

Yield 2

Number Of Ingredients 9

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste
¼ teaspoon paprika
cayenne pepper to taste
1 pinch garlic powder
1 pinch onion powder
1 tablespoon Chopped fresh chives

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

AVOCADO FRIES

Yield 6 to 8 servings

Number Of Ingredients 12

1/2 cup all-purpose flour
3 tablespoons (two 0.4-ounce packages) ranch dressing mix
2 large eggs
1 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 large ripe, firm avocados (about 8 ounces each)
Nonstick cooking spray, for the fries
One 8-ounce carton sour cream
1/4 cup mayonnaise
1/2 teaspoon garlic powder
1 teaspoon lime zest plus 1 tablespoon lime juice
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the flour and ranch mix in a shallow dish. Whisk the eggs in another shallow dish. Stir together the panko, 1 teaspoon salt and 1/2 teaspoon pepper in a third shallow dish.
  • Cut the avocados in half and remove the pits. Cut each half in half again and remove the peel. Cut the quarters into thirds. (Each avocado will have 12 slices.)
  • Working one at a time, dredge the avocado slices in the flour mixture, followed by the eggs and then the panko. Place on the prepared baking sheet. Coat the avocado slices with cooking spray and bake, turning halfway through and coating with more cooking spray, until golden brown, 16 to 18 minutes.
  • Meanwhile, stir together the sour cream, mayonnaise, garlic powder, lime zest, lime juice and cilantro in a small bowl. Season with salt and pepper. Serve the sauce with the avocado fries.

1/2 cup olive oil
1 1/2 cups vegetable oil

Salt and pepper

As soon as the sauce is very thick, thin with lemon juice, followed by the remaining oil. Place in a medium bowl and check for seasoning, adding more lemon juice, salt and pepper if necessary.
  • Peel potatoes and slice into 1/4-inch slices. Cut each slice in 1/4-inch strips, and rinse in cold water.
  • Heat the oil to 315 to 325 degrees F.

  • In small batches, fry blanched potatoes for 2 to 3 minutes, until golden brown and crispy. Drain well, and toss in mixing bowl with chopped parsley and salt and pepper. Serve with Dijon aioli.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are ideal for home fries as they hold their shape well and become crispy on the outside while staying tender on the inside.
  • Cut the potatoes evenly: This ensures that they cook evenly and become crispy on all sides.
  • Soak the potatoes in water: This helps remove excess starch, resulting in crispier fries.
  • Use a well-seasoned cast iron skillet: This helps create a crispy crust on the potatoes.
  • Don't overcrowd the skillet: Give the potatoes enough space to cook evenly.
  • Cook the potatoes over medium-high heat: This helps create a crispy crust without burning the potatoes.
  • Flip the potatoes halfway through cooking: This ensures that they cook evenly and become crispy on all sides.
  • Make the pimento aioli while the potatoes are cooking: This allows the flavors to meld and develop.
  • Serve the home fries and pimento aioli while hot: This is when they are at their best.

Conclusion:

Crispy Home Fries with Pimento Aioli is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner.
