2 cups all-purpose flour
½ cup shortening, chilled
1 teaspoon salt
½ cup cold water
2 apples
¼ cup white sugar, or to taste
⅛ teaspoon ground cinnamon, or to taste
oil for frying

Steps:

  • Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
  • Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).

My mother made these for years at home and for family reunions and for friends that would request them. They are a real treat for sure!

Number Of Ingredients 7

1 pkg dried apples
3 c water or enough to cover apples
3/4 c sugar
2 dash(es) salt
1 tsp cinnamon or apple pie spice
1 can(s) hungry jack, jr flaky biscuits 10 ct
2 c crisco shortening

Steps:

  • 1. Combine apples, water and sugar in large heavy saucepan. Bring to a boil and cook on medium heat until apples are soft and most liquid is gone. Stirring occasionally.
  • 2. When apples are done, cut and chop (cooked apples) with the side of a large spoon to make filling.
  • 3. Add cinnamon or apple pie spice. Mix well. Cool at least 10 minutes.
  • 4. Meanwhile, on floured surface, roll out biscuits into a 4 - 6 inch oval. Fill each biscuit with about 1 1/2 tablespoons of filling.
  • 5. Fold over biscuit and crimp edges together, sealing well.
  • 6. Melt shortening in heavy skillet and fry on medium heat(two or three pies at a time) for about 3 minutes on each side. Watch closely to prevent burning. NOTE: I have found that it is best to use CRISCO rather than bargain brand shortening. The cheaper shortening tends to burn the pies more quickly. CRISCO also makes for a crispier crust. Must be why my mama used it and nothing else.
  • 7. When golden brown and done, remove from skillet with slotted spoon or spatula and place on paper towels to cool. NOTE: Even if they get a LITTLE burned or too brown, they taste good. These are the ones that my husband prefers.

6 medium unpeeled tart red apples, sliced
3/4 cup sugar, divided

  • Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

6 cups all-purpose flour
4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned
Cherry pie filling, canned
Powdered sugar, for sprinkling

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
  • To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
  • Spoon a tablespoon or so of filling into the top half of one of the rectangles.
  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
