CRISP ROSEMARY FLATBREAD

1 3/4 cups unbleached all-purpose flour
1 tablespoon chopped rosemary plus 2 (6-inch) sprigs
1 teaspoon baking powder
3/4 teaspoon salt
1/2 cup water
1/3 cup olive oil plus more for brushing
Flaky sea salt such as Maldon

Steps:

  • Preheat oven to 450°F with a heavy baking sheet on rack in middle.
  • Stir together flour, chopped rosemary, baking powder, and salt in a medium bowl. Make a well in center, then add water and oil and gradually stir into flour with a wooden spoon until a dough forms. Knead dough gently on a work surface 4 or 5 times.
  • Divide dough into 3 pieces and roll out 1 piece (keep remaining pieces covered with plastic wrap) on a sheet of parchment paper into a 10-inch round (shape can be rustic; dough should be thin).
  • Lightly brush top with additional oil and scatter small clusters of rosemary leaves on top, pressing in slightly. Sprinkle with sea salt. Slide round (still on parchment) onto preheated baking sheet and bake until pale golden and browned in spots, 8 to 10 minutes. Transfer flatbread (discard parchment) to a rack to cool, then make 2 more rounds (1 at a time) on fresh parchment (do not oil or salt until just before baking). Break into pieces.

This is a very easy and fast to make snack or appetizer which can be served with your favorite dip, spread, salsa or sauce. But it is also delicious on its own. The beer in it adds a fantastic flavor and is the cause of the crispy bubbles which are formed during baking. The recipe is for one baking tray, but you can easily make it for a large number of guests. Men will (probably) like it with a glass of beer and a "hot" or "spicy" dip. And be prepared for a second or third serving, because this flat bread will gone fast. I have seen the making of this bread in a German TV show, but can't remember who make it. But whoever invented this bread, thank you for this fantastic flat bread.

2 cups all-purpose flour
1 teaspoon salt
3/4 cup beer
3 tablespoons olive oil
1 garlic clove, crunched
1 tablespoon dried herbs (thyme, rosemary, oregano, and or or marjoram)

Steps:

  • Preheat oven (480-490 F, 250-260 C). Put the baking tray into the oven. So it will be heated up, too.
  • Mix olive oil and garlic and set aside.
  • Sieve flour with salt and add beer. Mix with hands until dough is formed. Knead dough for 5 minutes with slightly floured hands. Let rest dough for about 10 minutes.
  • On a slightly floured working platform, roll out the dough with a rolling pin. It should be thin (if you like the bread very crispy roll out the dough very thin). Place the dough on baking paper (size of the baking tray).
  • Brush the dough with the olive oil. Sprinkle it with herbs (you could use more or less than 1 tablespoon).
  • Put dough (on baking paper) on the baking tray in the oven and bake for about 5 - 10 minutes until it is golden brown. During baking the bread will develop several "bubbles".
  • Take out of the oven and let cool on a cooling rack. Serve slightly warm or cool.
  • NOTE on herbs: use your favorite herbs. If you like the herbal flavors you can use more. But you could also leave them out completely. You could also use an "Italian herbs mixes". You can also use fresh herbs (if at hand).
  • NOTE on olive oil: I only use the oil for brushing and don't use the garlic in it. If you like a garlicky styled bread, you can use the garlic for brushing, too.

1 ½ cups all-purpose flour
1 ½ teaspoons kosher salt
1 teaspoon white sugar
½ cup freshly grated Parmigiano-Reggiano cheese
3 tablespoons extra-virgin olive oil
½ cup cold water
1 tablespoon minced fresh rosemary

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicon mat or parchment paper.
  • Place flour, salt, sugar, and grated cheese in a mixing bowl. Stir together until well mixed. Add rosemary; drizzle with olive oil and add water. Mix with a fork until mixture comes together in a fairly sticky dough and pulls away from the sides of the bowl, 3 to 5 minutes.
  • Transfer dough onto floured surface and add flour as you knead the dough. Knead until it no longer sticks to work surface, 4 to 5 minutes. Divide dough in half.
  • Dust work surface with flour. Roll out dough to 1/8-inch thickness or less. Brush or mist surface of dough very lightly with water. Sprinkle with coarse sea salt. Prick the entire surface of dough with the tines of a fork to prevent crackers from puffing too much when baking.
  • Cut each rolled out half into about 30 pieces with a pizza wheel. You can cut them out in squares, rectangles, or triangles--your choice. Transfer onto prepared baking sheet with a bench scraper or your floured fingers (dough will be very sticky).
  • Bake in preheated oven until perfectly browned and crunchy, 10 to 15 minutes, depending on the thickness.

1/2 ounce fresh compressed yeast
2 cups water, tepid (about 99F/37C)
2 teaspoons salt
5 cups 4 grain bread flour (mixed from wheat, rye, barley, and oats)

Steps:

  • To roll out: 1 1/4 cups plain white flour Crumble the yeast in a mixing bowl.
  • Pour on the water.
  • Stir to dissolve the yeast. Add salt and bread flour.
  • Knead to an elastic dough.
  • Turn out the dough onto a floured work surface. Cut into 3 parts.
  • Form each part into a sausage and cut it into 8 pieces.
  • Form each piece into a round ball.
  • Cover and let rise for about 30 minutes.
  • Roll out each ball into a very thin circle. N.B.
  • Do not knead! Roll and turn the cake several times.
  • When it is very thin, about 2 mm (1/12"), prick very closely with a fork.
  • Make a hole in the middle of each cake. Place two cakes on each baking sheet. Bake at once at 275M-0C/525M-0F oven for 3 - 4 minutes.
  • Cool on a rack.

1 cup olive oil
4 ounces thinly sliced prosciutto
1 store-bought flatbread (about 5 by 10 inches)
12 ounces fresh whole-milk ricotta cheese (about 1 1/2 cups)
Flaky sea salt
2 tablespoons amber honey
3 tablespoons vincotto
Chopped fresh chives, for garnish

Steps:

  • Preheat a grill to medium high. Meanwhile, heat the olive oil in a medium skillet over medium-high heat. Add the prosciutto and cook, turning, until crispy and brick red in color, 3 to 4 minutes. Remove the prosciutto to a paper towel-lined plate and remove the pan from the heat. Brush the flatbread with the prosciutto oil on both sides.
  • Add the flatbread to the grill and cook until golden brown and toasted, 1 to 2 minutes per side. Remove the flatbread from the grill and let cool 1 minute.
