1 pound small shrimp (71/90), peeled and deveined
3/4 cup flour
1/4 cup cornstarch
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
2 eggs
2 tablespoons milk
1 teaspoon hot sauce
canola oil

Steps:

  • Rinse shrimp under cold running water and pat dry.
  • On a shallow plate, combine flour, cornstarch, salt, pepper, paprika, and garlic powder. Stir until evenly dispersed.
  • In a large bowl, combine eggs, milk, and hot sauce. Whisk until well blended and frothy.
  • In a deep, wide skillet over medium heat, heat about 3 inches deep of oil.
  • Working in batches, lightly dredge shrimps in flour mixture, shaking off excess.
  • Dip in the egg mixture and then dredge again in flour mixture, patting down flour onto shrimp.
  • Gently add into hot oil one by one (to prevent clumping) and deep-fry, turning as needed, for about 3 to 5 minutes or until golden and crisp.
  • With a slotted spoon, remove from pan and drain on a wire rack set over a baking sheet. Season with chili powder and drizzle with lime juice, if desired. Serve immediately.

3 cups canned Cannelloni white beans
1/4 cup plus 2 tablespoons extra-virgin olive oil
16 large shrimp, peeled (tail left on) and deveined
4 cloves garlic, sliced
1 small serrano chile, thinly sliced or 1/2 teaspoon chili flakes
1 cup peeled, seeded and diced fresh tomato, canned or fresh
1 cup whole basil leaves
1 tablespoon lemon juice
Salt and freshly ground black pepper
2 tablespoons Italian flat-leaf parsley, chopped
Best-quality extra-virgin olive oil, for drizzling

Steps:

  • Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp.
  • Heat 1/4 cup oil in a large skillet over high heat. Add the shrimp, season with salt and cook for about 1 minute, tossing frequently. Remove the shrimp with tongs to a bowl. Add the garlic to the pan and saute until the garlic browns. Add the serrano chile or chili flakes and cook for 1 minute. Add the tomato and basil and stir briefly, then add the lemon juice. Season with salt and pepper. Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp. Remove the shrimp mixture to a plate and sprinkle with parsley.
  • Spoon the white beans on a platter or individual plates. Drizzle them with the best olive oil you have, and then top with the shrimp. Serve warm.

Steps:

  • Combine lemon zest, paprika, garlic, 3/4 teaspoon salt and 3/4 teaspoon pepper in a medium bowl. Add shrimp and toss to coat.

2 lbs peeled shrimp (21-25 size, marinate shrimp from 4 hours to overnight)
1/2 teaspoon pepper
1 teaspoon salt
4 tablespoons lemon juice
3 crushed garlic cloves (I usually add more garlic)
4 tablespoons mayonnaise (not Miracle Whip)
1 1/2 cups plain breadcrumbs
1 teaspoon basil
2 teaspoons parsley
1/2 teaspoon dill weed
1/2 cup butter
4 tablespoons olive oil

Steps:

  • Marinate shrimp up to over night. Mix breadcrumbs with spices. Coat each shrimp with breading. Place in single layer baking dish. Save marinade.
  • Stir melted butter and olive oil with remaining marinade. Pour over shrimp.
