BEER BATTERED BASS

Beer Battered Bass image

A study conducted at Auckland University in New Zealand leads researchers to believe that beer-battered fish may be healthier than fish fried in other batters. The alcohol in the beer causes the cooked batter to form a hard shell, keeping it from absorbing much of the frying oil. The researchers suggest using one cup of beer for each cup of flour!

Tips:

  • Choose the right fish: For this recipe, a firm-fleshed fish like bass is ideal. Other good options include cod, haddock, or tilapia.
  • Make sure the fish is dry: Before you batter the fish, pat it dry with paper towels. This will help the batter adhere to the fish.
  • Use a light touch: When you're dipping the fish in the batter, be gentle. Don't over-coat the fish, or the batter will be too thick and heavy.
  • Fry the fish in hot oil: The oil should be hot enough to sizzle when you drop the fish in. This will help the batter cook quickly and evenly.
  • Don't crowd the pan: When you're frying the fish, don't overcrowd the pan. This will cause the oil temperature to drop and the fish will not cook evenly.
  • Drain the fish on paper towels: After you've fried the fish, drain it on paper towels to remove any excess oil.

Crispy beer-battered fish is a delicious and easy-to-make dish that's perfect for a quick weeknight meal or a special occasion.
