1 teaspoon chili powder

1 lb orange roughy or other white fish fillets
1 egg, beaten
1 can (8 oz) pineapple chunks, drained
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 kiwifruit, peeled, chopped
1 mango or papaya, cut lengthwise in half, pitted and chopped
1 jalapeño chile, seeded, finely chopped

Steps:

  • Heat oven to 425°F. In 13x9-inch pan, melt butter in oven.
  • In small bowl, mix Bisquick mix, cornmeal, chili powder and salt. Dip fish fillets into egg, then coat with Bisquick mixture. Place in pan.

4 cod fillets (about 6 ounces each)
4 tablespoons salted butter
½ cup all-purpose flour
½ cup cornmeal
1 tablespoon seasoned salt
¼ teaspoon garlic powder
¼ teaspoon pepper
Garnish: fresh lemon wedges; chopped fresh parsley

Steps:

  • Preheat oven to 450 degrees F. Add the butter to an 11 x 7-inch baking dish (or another similar size dish that easily holds all of your fillets). Place the dish in the hot oven, just until the butter melts (it will only take a few minutes).
  • In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture to coat on all sides, shake off excess breading, and place in the hot dish. Very carefully turn the fish to coat with butter. You can also use a spoon to drizzle the melted butter over the top of the fish.
  • Bake for 7-8 minutes. Turn the broiler to HIGH and broil the fish for 1-2 more minutes, until the top of the fish is crispy and flakes easily with a fork. Keep a close eye on the fish while it's under the broiler to make sure that it doesn't burn.
  • Squeeze fresh lemon juice over the fish and sprinkle with parsley just before serving.

1 1/2 cups water
1 teaspoon salt
3/4 teaspoon sugar
1 cup long grain white rice
3 tablespoons chopped fresh cilantro
1 ripe mango, peeled, seeded, and diced
1 ripe avocado, peeled, seeded, and diced
1/2 cup diced fresh pineapple
1/4 cup minced red onions
1/4 cup minced red bell peppers

Steps:

  • In a bowl, combine the onions, oil, orange and lime juices, cilantro, garlic, salt, cumin, and cayenne. Place the fish in a large, non-reactive baking dish. Pour the marinade over the fish, cover and refrigerate for up to 1 hour.
  • Preheat a grill, and lightly oil the grill rack with vegetable oil. Remove the fish from the marinade. Place on the oiled grill and cook, skin side up, until marked, 45 seconds to 1 minute. Turn carefully with a spatula and cook, skin side down, until the fish is just cooked through, about 4 minutes, depending upon thickness. Remove from the grill.
  • Spoon the coconut rice into the center of 4 large plates. Arrange 1 fillet onto each serving of rice and top with the Tropical Salsa. Garnish with toasted coconut and cilantro, and serve.
  • In a saucepan, combine the coconut milk, water, salt, and sugar. Bring to a boil. Add the rice, stir well, and reduce the heat to medium-low. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20 to 24 minutes. Remove from the heat and let sit without stirring for 10 minutes.
  • Fluff with a fork and add the cilantro. Adjust seasoning, to taste. Serve hot.

4 Chilean sea bass fillets, or whitefish of your choice

1/4 cup flour, for coating

Steps:

  • Wearing rubber gloves, remove jalapeno seeds and membrane and discard. Prepare all the above ingredients, combine and refrigerate.
  • For the Spicy Paste: Combine the above ingredients to form a spicy paste.
  • For the Sea Bass: Preheat oven to 375 degrees. Season fish with salt and pepper and coat with flour. Brush a heavy coating of the spice paste on the skin of the fish. Add 2 tablespoons of oil to a very hot oven-safe skillet and sear the fish skin side down. When the skin is crispy, place the fish in the oven for approximately 10 to 12 minutes until done. Serve with spicy fruit salsa.

I adapted this recipe from Better Homes & Gardens. It is much healthier than pan frying fish and tastes just as good. This recipe works great on any fish fillets. My husband and I fish often and this works well with either frozen or fresh fillets. We have used it with trout, bass, and catfish.

1 lb fish fillet, thawed
1/4 cup milk
1/3 cup flour
1/3 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese, grated
1/2 teaspoon dill
1 dash black pepper
2 tablespoons butter, melted

Steps:

  • Rinse and pat dry fish. Cut into 4 serving size pieces if needed.
  • Measure thickness of each piece. This will determine cooking time.
  • Create an assembly-type line with milk in one dish, flour in another.
  • In the last dish, combine bread crumbs, parmesan, dill, and black pepper. Add melted butter, stir until forms small crumbs.
  • Dip fish in milk (this helps the flour stick to fish).
  • Then dip in flour.
  • Dip again in milk.
  • Then dip into bread crumb mixture. Press crumbs into fish if not sticking.
  • Place fish on GREASED baking sheet.
  • Bake uncovered at 450 degrees for 5 minutes per 1/2 inch thickness of fish. If the thickest part of fish is 1 inch thick, bake for 10 minutes. Check doneness by inserting fork and if fish flakes easily.
  • I place rings of onion and lemon juice on bottom and top of fish while baking for extra flavor.
