Steps:
- Slice the cucumber in half lengthways and use a teaspoon to scoop out the seeds. Slice cucumber into thick diagonal chunks. Tip it into a bowl and sprinkle with the sugar, vinegar and large pinch of salt. Leave for about 30 mins in the fridge. Meanwhile, tip the other salad ingredients into a bowl. Drain the cucumber and tip in with the rest of the ingredients.
- Heat a griddle pan or heavy-bottomed frying pan until hot, but not smoking. Rub the chicken with oil, season with salt and pepper and sear, skin-side down, for about 8 mins until the skin is crisp and brown and the chicken is practically cooked. Flip the chicken over and give it a few mins more on the flesh side to finish it off. Leave the chicken to rest, then slice each breast on an angle and serve with a pile of cucumber salad.

Tips:
- Use a mandoline or sharp knife to thinly slice the cucumbers for a more uniform and visually appealing salad.
- For extra spicy flavor, use serrano peppers instead of jalapeños. Remove the seeds and ribs from the peppers before dicing to reduce the heat level.
- If you don't have rice vinegar, you can substitute white vinegar or apple cider vinegar. However, rice vinegar has a milder flavor that won't overpower the other ingredients in the salad.
- For a sweeter salad, add a tablespoon of honey or sugar to the dressing.
- Garnish the salad with fresh cilantro or mint for added flavor and color.
Conclusion:
This crisp and spicy cucumber salad is a refreshing and flavorful side dish that is perfect for summer gatherings. The combination of sweet, sour, and spicy flavors is sure to please everyone at the table. With its quick and easy preparation, this salad is a great option for busy weeknights or potlucks. So next time you're looking for a light and refreshing salad, give this recipe a try. You won't be disappointed!
