1 tablespoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
2 cups panko (Japanese bread flakes)
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons good olive oil
2 tablespoons unsalted butter, melted
1/2 cup Dijon mustard, such as Grey Poupon
1/2 cup dry white wine
1 (3 1/2- to 4-pound) chicken, cut in eighths

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the garlic, thyme, 2 teaspoons salt, and 1 teaspoon pepper in a food processor fitted with the steel blade and process until the garlic is finely minced. 2 1/2 tablespoons Dijon mustard
3/4 cup coarse bread crumbs
2 tablespoons chopped fresh thyme, plus more for garnish
3/4 cup homemade or low-sodium store-bought chicken stock
1/2 cup heavy cream

Steps:

  • Preheat the oven to 375°F. Rub the chicken breasts lightly with the olive oil, and season with salt and pepper.
  • Combine 2 tablespoons butter with the mustard; reserve 2 teaspoons for the sauce. Melt the remaining 2 tablespoons butter; mix with the bread crumbs and thyme, and season with salt and pepper.
