CRISP LAMB WITH YOGURT AND SCALLIONS

Crisp Lamb With Yogurt and Scallions image

Here, a lamb breast cooked into tender excellence in the oven, under a sheet of aluminum foil, its skin rubbed with garlic, rosemary and mint. The result is cooled, its flavors concentrating overnight. To serve, the home cook cuts the meat from the bone, then sears it. The crisp surface of the meat gives way to soft, luscious lamb within, strong-flavored and salty-sweet. Citrus-flecked yogurt only slightly thinned by olive oil provides cool contrast, its creamy brightness melting against the flesh. Wilted scallions add a vegetal note, slightly acid, percussion in a love song.

Time 3h30m

Yield 4-6 servings.

Number Of Ingredients 18

1 head garlic, peeled
2 tablespoons kosher salt
1/4 cup extra-virgin olive oil
3 tablespoons fresh rosemary, finely minced
3 tablespoons fresh mint, finely minced
Freshly ground black pepper
1 lamb breast (approximately 3 pounds)
2 tablespoons extra-virgin olive oil
1 cup thick, Greek-style yogurt or goat yogurt
2 tablespoons freshly squeezed lemon juice
2 tablespoons fresh mint, finely minced
4 teaspoons lemon zest
2 teaspoons kosher salt
Freshly ground black pepper to taste
Smoked paprika to taste
5 bunches scallions
1 tablespoon plus 1 teaspoon white balsamic vinegar
Kosher salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 350. Using a mortar and pestle, mash the garlic and salt into a paste. Gradually mix in the olive oil. Stir in the herbs and pepper.
  • Fit the lamb into a roasting pan big enough to contain it. Smear it thoroughly with the paste, and place it ribs-side down in pan. Cover tightly with foil, and roast until it reaches an internal temperature of 170 degrees, 2 to 3 hours, depending on size of breast. Meat should be wobbly but not falling apart. Allow to cool, then cover and rest in the refrigerator overnight.
  • The next day, prepare the sauce. Whisk 1 tablespoon of olive oil into the yogurt. Then the lemon juice. Stir in mint, lemon zest and salt. Before serving, drizzle sauce with remaining tablespoon of olive oil and sprinkle with pepper and a pinch of paprika to taste.
  • Light your grill, or place a large skillet over medium-high heat. Cut the breast and ribs away from the bone that runs lengthwise between them. Cut the breast into half-inch slices that resemble thick-cut bacon, and separate the ribs. Reserve fat from the roasting pan. Cook a few pieces of lamb at a time on fairly high heat, until browned and crispy on both sides, approximately 4 to 6 minutes.
  • Brush the onions with some of the lamb fat. Place them on the grill or on a pan under a preheated broiler. Cook them, turning once or twice, until flimsy and slightly charred. Remove them to a large bowl and dress with the vinegar and salt and pepper to taste.

CRISPY LAMB WITH CUMIN, SCALLIONS AND RED CHILES

Crispy Lamb With Cumin, Scallions and Red Chiles image

Dongbei cai is the food of Northeast China. Weiliang Chen, the chef at Northeast Taste Chinese Food, the biggest of the Dongbei restaurants in Queens, makes an elegant, tender version of a popular Dongbei stir-fry of lamb with dried chilies, made fragrant and crunchy with cumin seeds - a legacy of the nomadic Mongols who long ruled Central Asia, carrying spices on horseback along with their arrows. Lamb is considered a Northern taste and excessively "strong" by many Chinese cooks; it is always cooked with powerful aromatics, like chili peppers and garlic, to subdue it.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon egg white
1 tablespoon rice wine or dry sherry
2 teaspoons cornstarch
1 teaspoon salt, more to taste
1/2 teaspoon black pepper
1 pound boneless leg of lamb or lamb shoulder, cut into strips about 1/2 inch by 2 inches
3 tablespoons vegetable oil
2 tablespoons cumin seeds, lightly cracked in a mortar or grinder
2 tablespoons whole dried red chile peppers, about 2 inches long
4 scallions, white and green parts only, cut on diagonal into 1-inch lengths
Sesame oil, for seasoning

Steps:

  • In a bowl combine egg white, wine, cornstarch, salt and pepper. Add lamb and set aside to marinate 1 hour.
  • Heat a large wok or skillet over high heat until a drop of water sizzles on contact. Swirl half the oil into wok and carefully add lamb, spreading it in a single layer. Let sear a moment, then stir-fry briskly just until lamb is no longer pink. Transfer to a plate. (If your wok is not large enough to hold all the lamb, do this in 2 batches, using extra oil.)
  • Swirl remaining 1 1/2 tablespoons oil into empty wok, add cumin seeds and chiles and stir-fry a few seconds until cumin seeds start to pop. Press chiles against sides of wok to char their skins.
  • Add scallions and stir-fry 1 minute. Then return lamb to wok and stir-fry 1 to 2 minutes more until lamb is cooked through. Turn off heat, sprinkle with salt and drops of sesame oil, and serve immediately.

Tips:

  • Choose high-quality lamb: Look for lamb that is bright red in color and has a firm texture. Avoid any lamb that is brown or has a slimy texture.
  • Marinate the lamb: Marinating the lamb in yogurt and spices helps to tenderize it and add flavor. You can marinate the lamb for as little as 30 minutes or up to overnight.
  • Cook the lamb over high heat: This will help to create a crispy crust on the outside of the lamb while keeping the inside tender and juicy.
  • Use a meat thermometer: To ensure that the lamb is cooked to your desired doneness, use a meat thermometer to check the internal temperature. For medium-rare lamb, the internal temperature should be 135 degrees Fahrenheit.
  • Let the lamb rest before slicing: This will help the juices to redistribute throughout the lamb, resulting in a more tender and flavorful dish.

This recipe for Crisp Lamb with Yogurt and Scallions is a delicious and easy-to-make dish that is perfect for any occasion.
