1/2 c chopped yellow onion
1 clove garlic, minced
1 lb green string beans, tips snapped off
1 c canned diced tomatoes (drain and reserve 1/2 cup liquid)
1 Tbsp tomato paste
1/4 tsp ground black pepper
1/2 tsp salt
1/2 tsp dried oregano
2 Tbsp chopped fresh parsley
water, as needed

Steps:

  • 1. Heat oil in heavy saucepan. Add onions and garlic. Cook, stirring, until golden.
  • 2. Add all remaining ingredients, including reserved tomato juice. Add water if needed, to just cover beans.
  • 3. Cover pan and simmer for 30 minutes. Serve beans with juices.
