10 ounces milk
5 eggs
5 ounces flour
4 teaspoons oil
salt
3 scallions
3 tablespoons oil
1 garlic clove
10 ounces vegetable broth
14 ounces ground beef
1 cup sour cream
3 teaspoons cayenne pepper
5 ounces feta cheese
1 teaspoon flour
salt

Steps:

  • Crepes: Beat the milk with the eggs, the flour and a dash of salt. Make 8 crepes in an 8 inches diameter skillet, using 1/2 teaspoons of oil for each one.
  • Filling: Wash and cut the scallions in slices and in a skillet, fry these in oil.
  • Mash the garlic and add it to the onion as well as 3/4 cup of vegetable broth and the ground beef.
  • Cook for 5 minutes. Drain the meat with a strainer and reserve the juices.
  • Season the meat with half of the sour cream and 1 teaspoons of pepper. Crumble the feta cheese and add it to the meat.
  • Place 3 tablespoons of the meat in each crepe. Fold the edges and roll.
  • Place the crepes on a greased pan.
  • Sauce: With the reserved juices from meat, complete with the rest of the broth to make 1 cup and bring to a boil.
  • Mix the remaining sour cream with the rest of the cayenne pepper, the flour, and add this to the "boiling" broth. Add salt to taste.
  • Pour this "sauce" over your crepe rolls and bake at 350ºF for 15-20 minutes.

Crêpes
1 cup all-purpose flour, sifted (or might need a bit more)
1 cup milk
1 cup lukewarm water
2 tablespoons butter, melted
3 large eggs
a good pinch of salt
a tiny pinch of sugar
butter/oil, for greasing
Beef Stuffing
about 1,5 pound of ground beef
1 medium onion, shopped (1 cup chopped)
3 garlic cloves, minced
1 tbsp olive oil
1 tbsp fresh thyme
1 tsp herbs de provence
1 tsp smoked paprika
salt and pepper, to taste
1/2 cup good quality tomato sauce / finely chopped canned tomatoes
1/4 - 1/3 cup plain cream cheese, divided into small pieces
1/2 - 2/3 cup grated hard (pizza) mozzarella

Steps:

  • To make the batter, sift the flour and salt. Gradually add the milk and lukewarm water, constantly whisking with a whisk, until homogeneous. Incorporate the eggs, sugar, melted buttere and adjust the batter if necessary by adding more flour/water. Let the batter stand 15 minutes in the fridge.
  • Slightly grease the skillet and make the crepes as usual. Set aside. You will get about 7-10 crepes depending on skillet size while the stuffing would be enough for 4-6 crepes.
  • In a meanwhile, heat olive oil in a pan and saute the onion and garlic, over medium heat, 5 minutes.
  • Add the ground beef and cook over high medium heat, stirring often and braking with a spatula the large pieces into small, about 5 minutes.
  • Decrease heat to low medium. Add a little (few spoons) of water, cover, and cook for about 7 minutes, stirring occasionally.
  • Stir in the tomatoes, spices, and herbs. Cook uncovered for another 5 minutes or until fully cooked. Off heat.
  • Preheat oven to 180 degrees C (360 degrees F).
  • Take one crepe and place some stuffing (3-5 tablespoons depending on the size) in the middle of it, add a few pieces of cream cheese, and sprinkle with the mozzarella. Gently (to avoid damaging them) transfer the stuffed crepes into a baking dish (skillet) slightly folding the edges.
  • Bake in the oven for about 7-10 minutes or until the edges are crispy and the cheese is melted. Remove from the oven.
  • Enjoy!

100 ml wine, dry, white

500 g ground beef
500 g tomatoes, chopped
1 tablespoon dried oregano leaves
1/2 teaspoon ground cinnamon

Steps:

  • Mix all ingredients together until smooth.
  • Grease your pan.
  • Pour a ladle full of batter into the pan, swirling the pan to spread it all around. Cook till the top starts to bubble and then flip.
  • Prepare all the omelettes in the same way.
  • During this time you can begin to prepare the meat sauce.
  • Keep the omelettes warm until the sauce is ready.
  • Fry onion in large pan till golden.
  • Add beef and fry on higher heat for about 5 minutes.
  • Add tomato concentrate and fry 2 more minutes.
  • Add wine and continue to cook until evaporated.
  • Add tomatoes and spices until sauce gets thick.
  • Season with salt and adjust spices to your taste.
  • Serve with the sauce.

I know this says Omlette but that is what they are called in Swiss! (pronounced om-le-tteh). They would be thin pancakes or crepes in Oz. We usually fill with sliced fried mushrooms and cheese. I had a really nice one last night with Nutella and crushed nuts! Yield will depend on the size of your pan and how thin you can make them (and how many you want to eat! We usually have 2-3 each)

1 1/2 cups plain flour
1/2 cup self raising flour
2 eggs
1 1/2 cups water, mixed with
1 1/2 cups milk
2 teaspoons oil (flavourless, like sunflower)
1 pinch salt

Steps:

  • Sift flours (you don't have to but it makes them a bit lighter) into a bowl or wide jug.
  • Add lightly beaten eggs and half the milk-water.
  • Whisk with an electric whisk (or with beaters) until mixed, add the remaining milk-water.
  • Whisk some more, for about 1 minute.
  • Add oil and salt, whisk for 1 more minute until smooth and frothy.
  • Refrigerate for 1/2 hour.
  • Take out of the fridge and lightly whisk again, check consistency- it may need a little extra liquid at this stage but you probably wont be able to tell until you start making them.
  • Spray a nonstick pan with oil and heat it up (not too hot!).
  • Lift the pan off the heat. Ladle or pour a small amount of omlette mix into the pan. Rotate the pan so the omlette mix covers the bottom of the pan thinly and is even.
  • Put the pan back on the heat and cook the underside until it is browned.
  • Flip.
  • Cook until ready.
  • Remove the omlette from the pan and put on a plate, cover with another plate to keep them warm. Whilst you are making the others you can keep them like this in a warm oven. Don't worry if they look a little stiff, once they are stored like this (with the plate on top), the steam will soften them so that they roll nicely when you fill them.

1 onion, chopped

500 g ground beef

100 ml dry wine
1 tablespoon tomato concentrate
1 tablespoon oregano, dried
1/2 tablespoon cinnamon, ground

1 teaspoon salt
3 tablespoons kefalotiri (substitute pecorino or parmigiano cheese)
1 egg
3 tablespoons margarine
3 tablespoons flour
2 cups milk
2 cups water
2 medium mashed potatoes (susbstitute 2 tablespoon potato powder and 1 cup water)
1/2 teaspoon nutmeg
pepper
salt
2 tablespoons kefalotiri (substitute pecorino or parmigiano cheese)
1 egg

Steps:

  • Prepare the pasta in salted water as indicated in the product descriptions. Drain it well and keep warm.
  • In the meanwhile prepare the meat sauce:.
  • Fry the onion in the oil until golden.
  • Add garlic and meat. Cook for 5-8 Minutes until done.
  • Switch off the heat.
  • Add all the other ingredients one after the other as indicated in the ingredients list.
  • If necessary adjust the salt.
  • Mix milk with water in bowl.
  • For the bechamel melt margarine and add the flour.
  • Reduce heat when the flour changes color and add the milk/water mix at once. Stir it quickly until it thickens. Switch off the heat source.
  • Add all the remaining ingredients and adjust the salt.
  • Prepare your baking mold with some olive oil.
  • Put 2/3 of the pasta on the bottom of the mold (at least a 4 liter casserole!).
  • Add the meat sauce, followed by the remaining pasta and top with the bechamel sauce. Don't stir!
  • Bake 40 Minutes at 180°C or until the top is golden (heat and timing are basing it on convection oven).
