In the realm of culinary delights, Creole Spaghetti and Daube stand as testaments to the vibrant heritage and bold flavors of Louisiana. Creole Spaghetti, a staple in New Orleans cuisine, is a delectable symphony of flavors, featuring succulent shrimp, tender chicken, and piquant sausage, enveloped in a rich and aromatic Creole sauce, all nestled atop a bed of steaming spaghetti. Daube, on the other hand, is a classic Provençal beef stew that exudes rustic charm and hearty goodness. Slow-cooked to perfection, the beef becomes melt-in-your-mouth tender, infused with the savory essence of red wine, herbs, and vegetables. Served alongside creamy polenta and a medley of sautéed vegetables, Daube offers a comforting and robust culinary experience.

Time 4h45m

Number Of Ingredients 23

1 Tbsp bacon grease
1 Tbsp olive oil; or 2 tbsp if not using bacon grease
3 - 3 1/2 lb boneless chuck roast
2 onions, chopped
1/2 bunch green onions, sliced fine
1/2 c celery, diced
1/2 c bell pepper, chopped
6 oz tomato paste
16 oz tomato sauce
1 can(s) whole or diced tomatoes (optional)
3 c beef broth
1/4 - 1/2 c burgundy wine
1 tsp oregano, dried or italian seasoning
2 Tbsp fresh chopped basil, or 1 tbsp dried
6-8 clove garlic, minced
1 Tbsp granulated garlic
1 Tbsp granulated onion
2 bay leaves
1/2 tsp sugar
salt & pepper to taste
1 lb fresh mushrooms, sliced
8-10 cooked meatballs (optional)
chopped fresh basil for garnish

Steps:

  • 1. Cut chuck roast into 1 1/2 to 2 inch cubes and pat dry with paper towel. In a heavy dutch oven heat the bacon grease and oil until hot. Add some of the meat and sear on all sides. Cook the meat in batches and don't over crowd the pot or the meat will steam instead of sear. When nicely browned remove meat to a plate and set aside.
  • 2. To the drippings in the pot add chopped onions, green onions, celery and bell pepper and saute on low until onions are tansparent but don't let them brown. Add tomato paste, tomato sauce and minced garlic; cook down for about 5 minutes stirring constantly to prevent scorching.
  • 3. Add wine and beef stock, oregano, basil, granulated garlic & onion, bay leaves, sugar and salt & pepper to taste.
  • 4. Simmer stock for about 30-45 minutes, adding more beef stock as needed to keep sauce fairly thin. Add meat back to pot, along with juices from meat, cover with a splatter screen or off-set the lid so steam can escape without splattering sauce all over the kitchen, and cook for 2-3 hours. Taste for seasoning and adjust to taste.
  • 5. As sauce begins to thicken, add fresh mushrooms and and meatballs (optional). When desired thickness is reached, taste for seasoning once more and ladle over spaghetti and garnish with chopped fresh basil. Serve with crusty french bread and fresh grated parmigiana reggiano. Enjoy!

CREOLE DAUBE

Creole Daube image

A recipe I found on Pinterest that looked delicious and I am posting it for ZWT, untried by me, but looks like a cross between a pot roast and swiss steak type of recipe. The recipe is posted on "Drick'sRamblingCafe.blogspot and here is what he stated: "In the late 1800's when Sicilian immigrants began settling in southern Louisiana, Creole cooking took on a completely new dimension. The influence of garlic for one and the use of tomatoes in making tomato gravy or red gravy such as the one featured in this recipe. This recipe will change the way you cook a roast and will fill your house with a wonderful aroma with the cuisine of long ago cooks. Enjoy!" There are several spices listed, but apparently it is common to post no specific amounts, so I would suggest starting with 1/8(maybe even less for the cayenne pepper) to 1/4 teaspoon and then taste and add more to your liking in the end.

CREOLE DAUBE

Creole Daube image

As old as the swamps in Louisiana, this recipe predates the title pot roast! This is the most wonderful tasting pot roast you'll ever try. Worth every minute of the work! I have such fond memories of my grandmother creating this magic in her kitchen and her entire house filled with the heavenly aroma. For the Creole seasoning, I use Emeril's with half the salt and then watch the amount of salt and pepper you add depending on the amount already in your Creole seasoning.

Provided by carvalhohm2

Number Of Ingredients 15

1 tablespoon. GOYA® Extra Virgin Olive Oil
1 1/4 pound ground beef (85% lean)
1/4 pound country ham, cut into 1/4" pieces (about 3/4 cup)
2 cans GOYA® Tomato Sauce, 8 ounces
1/2 cup GOYA® Sofrito
2 tablespoon GOYA® Minced Garlic
1 tablespoon sugar
1 teaspoon GOYA® Ground Cumin
1/2 teaspoon GOYA® Oregano
1 packet GOYA® Sazon with Coriander & Annatto
1/4 cup GOYA® Manzanilla Olives Stuffed with Minced Pimientos, chopped
1/2 cup finely chopped fresh cilantro, divided
1/2 teaspoon GOYA® Adobo All-Purpose Seasoning with Pepper
1 pound spaghetti
Parmesan cheese, to taste

Steps:

  • Heat olive oil in 12" skillet over medium-high heat. Add beef; cook, breaking up with wooden spoon, until browned, about 6 minutes. Transfer beef to plate; drain and discard but 1 tbsp. fat from pan; reheat pan over medium heat. Add ham; cook, stirring occasionally, until ham is golden brown, about 4 minutes. Add tomato sauce, sofrito, garlic, sugar, cumin, oregano, and sazón to pan; cook until tomato sauce mixture begins to bubble. Stir in reserved beef, olives, ¼ cup cilantro and Adobo. Simmer, stirring occasionally, until sauce thickens and flavors come together, about 8 minutes more. Stir in remaining cilantro. Meanwhile, cook spaghetti according to package instructions; strain pasta, reserving 1½ cups pasta water. Add spaghetti and reserved pasta water to skillet with sauce over medium-high heat. Using tongs, toss spaghetti with sauce until well combined and sauce coats spaghetti, about 3 minutes. Serve with Parmesan cheese.

Tips:

  • Utilize quality ingredients: For a flavorful and authentic Creole spaghetti and daube, select high-quality ingredients like fresh vegetables, tender cuts of meat, and flavorful spices. Using fresh herbs and seasonings will elevate the dish's taste.
  • Brown the meat properly: Browning the meat adds depth and richness to the dish. Ensure the meat is browned in batches to prevent overcrowding, which can result in steamed meat rather than browned meat.
  • Use a flavorful stock: Making a rich and flavorful stock is crucial for the sauce. Use a combination of bones, vegetables, and herbs to create a flavorful base for the sauce. Alternatively, you can use a store-bought stock, but be sure to choose one that is low in sodium.
  • Simmer the sauce for a while: Simmering the sauce for an extended period allows the flavors to meld and develop. Aim for a minimum of 1 hour of simmering to achieve a rich and flavorful sauce.
  • Use a variety of vegetables: Incorporating a variety of vegetables, such as bell peppers, onions, and celery, adds texture, color, and flavor to the dish. Choose vegetables that complement the meat and sauce.
  • Cook the pasta al dente: Cooking the pasta al dente ensures it retains a slight bite and doesn't become mushy. Follow the package instructions for the recommended cooking time, but taste the pasta a minute or two before the suggested time to ensure it is cooked to your desired doneness.
  • Garnish with fresh herbs: Before serving, garnish the Creole spaghetti and daube with fresh herbs like parsley or cilantro. This adds a pop of color and freshness to the dish, enhancing its overall presentation.

Creole spaghetti and daube is a hearty and flavorful dish that combines the best of two culinary traditions: Creole and Italian.
