1 tsp minced garlic
3/4 cup less-sodium chicken broth
1 (10 oz) can diced tomato and green chilies, undrained (like Rotel)
8oz peeled and deveined med. shrimp
1 (15oz) can kidney beans, rinsed and drained
2 Tbs chopped fresh parsley

Steps:

  • 1. Heat oil in a large saucepan over medium-high heat; saute bell peppers, garlic and sausage, stiring occasionally, about 3 minutes or until peppers are tender. 2. Add broth and tomatoes; bring to a boil. 3. Add shrimp and beans, cover and reduce heat ans simmer for 6 minutes or until shrimp are done. Sprinkle with parsley.

Tips:

  • Use a large pot or Dutch oven. This will ensure that there is plenty of room for the shrimp, sausage, and vegetables to cook without overcrowding.
  • Don't overcrowd the pot. If you add too much shrimp, sausage, and vegetables to the pot, they will not cook evenly.
  • Use a good quality creole seasoning. This is essential for giving the stew its authentic flavor.
  • Don't overcook the shrimp. Shrimp cooks very quickly, so be careful not to overcook it or it will become tough.
  • Serve the stew over rice or pasta. This will help to soak up the delicious sauce.
