1 tablespoon(s) creole seasoning mix
1/4 cup(s) unsalted butter, melted
3 tablespoon(s) freshly squeezed lemon juice
1 tablespoon(s) lemon zest
12 large shrimp or prawns, rinsed, peeled and deveined
16 large pieces red onion
16 large pieces mixed bell peppers
12 large slices andouille sausage, cut into 1/2-inch thick
12 large whole cherry tomatoes, washed
4 skewers

Steps:

  • In a medium mixing bowl, combine seasoning, butter, lemon juice and zest. Toss prawns until well coated. Tread on red onion, bell pepper, andouille, cherry tomato, and then prawn, piercing it twice. Repeat the same order of ingredients finishing with onion. Brush remaining creole mixture over the skewers.
  • Heat grill to 500-550ºF and just before putting the skewers, brush grates with oil, using tongs and paper towels. Place skewers on BBQ and grill for 5-6 minutes, turning once. Makes 4 skewers

1 tablespoon creole seasoning
1/4 cup unsalted butter, melted
3 tablespoons lemon juice
1 tablespoon lemon zest
12 large shrimp, rinsed, peeled and deveined
16 pieces red onions
16 pieces bell peppers
12 pieces andouille sausages, cut 1/2-inch thick
12 cherry tomatoes, washed

Steps:

  • In a small bowl, combine creole seasoning, butter, lemon juice and lemon zest; stir well. Add shrimp to the mixture and gently toss to coat; set aside.
  • Skew a piece of onion followed by a piece of pepper and then a slice of Andouille sausage, whole cherry tomato and finally a shrimp, pierced twice. Repeat the same order and finishing it with a piece of red onion. Make 4 skewers.
  • Brush the skewers with the remaining creole seasoning mixture trying to cover all.
  • Oil the BBQ grates. Place the skewers on the bbq and grill at 450-500ºF for 5 minutes per side, turning once. Serve immediately.

3/4 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped green pepper
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup tomato juice
1/4 cup water
1/4 cup salsa
2 tablespoons lemon juice
1 tablespoon minced fresh parsley
2 teaspoons chili powder
1-1/4 teaspoons garlic powder
1/4 teaspoon pepper
1 pound cooked medium shrimp, peeled and deveined
Hot cooked rice

  • In a large skillet, saute the onion, celery and green pepper in oil for 6-7 minutes or until crisp-tender. 2 tablespoons vegetable oil, divided
1 pound andouille sausage, cut crosswise on diagonal into 3/4-inch-thick pieces
1 large onion, halved, thinly sliced
1 large red bell pepper, cut into 1/3-inch-wide strips
1 tablespoon chopped fresh thyme
1 cup low-salt chicken broth
5 tablespoons Creole mustard (such as Zatarain's)
2 teaspoons red wine vinegar
