2 medium onions, finely chopped
2 celery ribs, finely chopped
1 medium green pepper, diced
2 teaspoons canola oil
4 boneless skinless chicken breast halves (4 ounces each)
1 can (15 ounces) crushed tomatoes
1/2 cup reduced-sodium chicken broth
1 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • In a large nonstick skillet coated with cooking spray, saute the onions, celery and pepper in oil until tender. Add the remaining ingredients. Bring to a boil; reduce heat. 2 onions
1 green belle pepper chopped
1 celery stalk
1/2carrot chopped
1 can stewed tomato
1/2 cup chicken broth
2Tbs chopped parsley
1tsp thyme
1/4 tsp salt
