Meatloaf with a Creole Sauce image

This is a perfect entree for a comfort meal! Add some mashed potatoes, a green vegetable or salad! Beautiful and perfect. Meatloaf is so easy and absolutely delicious. I like to add a "creole sauce" (that's what I call it) while serving. This makes it even more deliciouis.

Provided by Becky Spoon

Number Of Ingredients 21

1 small 0nion, diced
1 small/medium Belll pepper/diced
1 tbsp Olive oil
1 tbsp Butter
1 1/2 lb Ground beef or combination of ground pork and beef
1 cup Bread crumbs or more if needed
1/4 cup Tomato sauce
2 eggs
1 tsp salt
1/2 tsp pepper; dried or fresh thyme
1/2 cup Ketchup
2 tbsp Worcestershire sauce
2 tbsp Brown sugar
1/4 cup tomato sauce
1/4 cup Ketchup
1 tsp Worcestershire sauce
2 tbsp brown sugar
1/2 cup bell pepper/diced
1/2 cup onion/diced
1 14.5 ounce stewed or diced tomatoes
salt and pepper to taste...add a pinch of sugar if tomatoes are too acidic.

Steps:

  • For the Meatloaf:Preheat the over to 350 degrees. Sauté the onion and bell pepper in the olive oil and butter combination until tender and set aside to cool. Meanwhile place the ground meats in a bowl, add the egg, breadcrumbs, tomato sauce, seasons and the onion and bell pepper once cooled. Combine all the ingredients. I use my hands...add more bread crumbs if needed. You want the meatloaf to hold together.....not too loose.....you want it to form a nice loaf in a pan or in a sheet pan. Mold into a loaf, place on a sheet pan, top with the topping sauce coating the top and sides, bake 30 or 45 minutes until center is firm or internal temperature reaches 160. Let the meatloaf rest a few minutes and top with the creole sauce. Slice and Serve!!

A mild spicy heat combined with sweetness; add Emeril's Essence or a few drops of Tabasco sauce for more zing. Please read reviews for insight on amount of Splenda and adjust to your own preference; a little bit of Splenda goes a long way. 1 1/3 pounds ground sirloin, 90 percent lean ground beef

1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste*
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
1/4 medium onion, finely chopped, reserved from meatloaf mixture

1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce

Dressed Tossed Salad

Steps:

  • Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
  • Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
  • Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
  • Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
  • Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.

I woke up thinking creole and cajun. I then thought why not combine it in a meatloaf. This was a huge success! The meatloaf was so flavorful and the creole sauce took it over the top. I served it with fried cabbage and mashed potatoes. I put the creole sauce on the meatloaf and the mashed potatoes.

CREOLE MEAT LOAF

Creole Meat Loaf image

This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!

Provided by breezermom

Categories     Creole

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 19

1 1/2 lbs ground beef
1/2 lb ground pork
1 small green bell pepper, grated
2 eggs, beaten
1 small onion, grated
1/2 garlic clove, minced
1 cup milk
1 cup toasted breadcrumb
1 tablespoon Worcestershire sauce
salt and pepper
2 tablespoons shortening
2 tablespoons all-purpose flour
1/2 green bell pepper, chopped
1/2 small onion, chopped
1 garlic clove, minced
1 cup milk
2 cups canned tomatoes
1 tablespoon Worcestershire sauce
salt and pepper

Steps:

  • For the meat loaf, mix the first 10 ingredients thoroughly in the order given and shape into a loaf. Pack into a greased 9 x 5 x 4 inch loafpan. Cover with creole sauce and bake at 350 degrees for 1 hour.
  • For the creole sauce, melt the shortening; add flour, and cook over medium heat until a rich brown, stirring constantly.
  • Add chopped pepper, onion, and garlic. Let simmer until wilted. Add milk.
  • Add tomotoes, salt and pepper (or creole seasoning), and worcestershire sauce. Let come to a boil and cook for 4 to 5 minutes.

Tips:

  • Choose high-quality ground beef. Look for ground beef that is at least 80% lean. This will help ensure that your meatloaf patties are juicy and flavorful.
  • Use a variety of seasonings. Creole seasoning is a great way to add flavor to your meatloaf patties. You can also use other seasonings, such as garlic powder, onion powder, paprika, or chili powder.
  • Don't overmix the meatloaf mixture. Overmixing will make the meatloaf patties tough. Mix the ingredients just until they are combined.
  • Form the meatloaf patties into small patties. This will help them cook evenly.
  • Cook the meatloaf patties over medium heat. This will help prevent them from burning.
  • Serve the meatloaf patties with your favorite sides. Mashed potatoes, green beans, and cornbread are all great options.

Conclusion:

Creole meatloaf patties are a delicious and easy-to-make dish. They are perfect for a weeknight meal or a special occasion. With a few simple tips, you can make sure that your Creole meatloaf patties are juicy, flavorful, and cooked to perfection.
