¼ cup vegetable oil
¼ cup all-purpose flour
1 green bell pepper, chopped
1 medium onion, chopped
2 cups cooked chicken, chopped
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid

Tips:

  • Choose the right chicken. For this recipe, bone-in, skin-on chicken thighs are the best choice. They're flavorful and juicy, and the skin will help to keep the chicken moist during cooking.
  • Use fresh okra. Fresh okra is best for this recipe. Frozen okra can be used, but it will not have the same flavor or texture as fresh okra.
  • Don't overcook the okra. Okra should be cooked until it is tender, but not mushy. Overcooked okra will be slimy and unpleasant to eat.
  • Season the chicken and okra well. Creole seasoning is a blend of spices that is commonly used in Cajun and Creole cuisine. It typically includes paprika, garlic powder, onion powder, black pepper, cayenne pepper, and thyme. You can adjust the amount of seasoning to your taste.
  • Serve the chicken and okra with your favorite sides. This dish can be served with rice, potatoes, or pasta. It can also be served with a salad or vegetable.

Conclusion:

Creole chicken and okra is a flavorful and easy-to-make dish that is perfect for a weeknight meal. With just a few simple ingredients, you can create a delicious and satisfying meal that the whole family will enjoy. So next time you're looking for a new chicken recipe, give Creole chicken and okra a try.
