Time 1h15m

Yield 10 serving(s)

Number Of Ingredients 9

6 slices bacon, diced
2 cups yellow onions, diced
4 cups tomatoes, diced
1 head green cabbage, cut into 1 1/4-inch squares
4 cups tomato sauce
1 cup water
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • SAUTE DICED BACON, add onion, and continue cooking. Add all other ingredients and bring to a boil, stirring to avoid scorching. Turn down to a simmer and stew until cabbage is done, about 1 hour. Makes 10 big servings.

Tips:

  • Choose the right cabbage: Select a firm, dense cabbage with tightly packed leaves. Avoid heads with brown spots or wilted leaves.
  • Wash and chop the cabbage properly: Rinse the cabbage under cold water and remove any outer leaves that are damaged or discolored. Cut the cabbage into thin strips or wedges, depending on your preference.
  • Use a large pot or Dutch oven: Creole cabbage is a hearty dish, so you'll need a large pot or Dutch oven to cook it in. Make sure the pot has a lid so that you can braise the cabbage.
  • Don't overcrowd the pot: When adding the cabbage to the pot, don't overcrowd it. The cabbage should be in a single layer so that it can cook evenly.
  • Season the cabbage well: Creole cabbage is typically seasoned with a variety of spices, including garlic, onion, celery, green bell pepper, salt, and black pepper. You can also add other spices, such as cayenne pepper, paprika, or cumin, to taste.
  • Braise the cabbage until tender: Braising is a cooking method that involves simmering the cabbage in a flavorful liquid, such as broth or water, until it is tender. This usually takes about 30-45 minutes, depending on the type of cabbage you are using.
  • Serve the cabbage hot: Creole cabbage is best served hot, with rice, mashed potatoes, or another side dish of your choice.
