OVEN BAKED SALMON WITH CREME FRAICHE
Salmon recipes can be cooked many ways, but in my book, there's nothing as easy as oven baked salmon in white wine and lemon for a healthy dinner, or to make and use for meal prep all week long.

Steps:
- In a food processor, add the smoked salmon along with the mayonnaise and some pepper. Pulse just until the salmon is broken up into slightly smaller pieces. Do not overmix.
- Place the mixture into a bowl and combine with the raw salmon and creme fraiche or sour cream. You may add more or less depending on how creamy you like it. Add the shallot, lemon zest and juice and half the chives. Season with pepper; the mixture will likely not need salt due to the smoked salmon.
- Transfer the mixture to a shallow wide bowl and cover with the remaining chives. Serve with crostini.

Steps:
- Whisk first 3 ingredients in a small bowl until well blended. Place salmon in a food processor; pulse just a few seconds at a time until salmon is reduced to pea-size pieces. Add salmon and 2 tablespoons chives to crème fraîche mixture; fold to incorporate. Season to taste with salt and pepper. DO AHEAD: Can be made 3 days ahead.
- Using a vegetable peeler, remove zest from lemon (yellow part only). Cut lengthwise into thin strips. Garnish dip with lemon zest and 2"-long pieces of fresh chives. Serve with pumpernickel toasts.
Tips:
- Use high-quality ingredients: Fresh salmon, good quality creme fraiche, and fresh herbs will make all the difference in the taste of your spread.
- Don't overmix the spread: Overmixing will make the spread too thick and dense. Mix just until the ingredients are combined.
- Chill the spread before serving: Chilling the spread will help it to firm up and make it easier to spread.
- Serve the spread with a variety of accompaniments: Some popular accompaniments for salmon spread include crackers, bread, bagels, and vegetables.
- Store the spread in the refrigerator: The spread can be stored in the refrigerator for up to 3 days.
Conclusion:
Creme fraiche salmon spread is a delicious and easy-to-make appetizer or snack. It is perfect for any occasion, from a casual get-together to a holiday party. The spread can be served with a variety of accompaniments, making it a versatile dish that can be enjoyed by everyone.
