2/3 cup shortening
1 cup milk

1 jar (12 oz) fudge topping
3 tablespoons white crème de menthe or crème de menthe-flavored syrup*
4 drops green food color
1 container (8 oz) frozen whipped topping, thawed (3 cups)

Steps:

  • Heat oven to 350°F. Grease and flour 13x9-inch pan. Beat flour, sugar, shortening, milk, 1/4 cup crème de menthe, the baking powder, salt and vanilla in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally. Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool completely.

One 9-ounce box chocolate wafer cookies, such as Famous Chocolate Wafers
1/2 teaspoon kosher salt
1 3/4 cups (10 ounces) bittersweet chocolate chips
1/4 cup coconut oil
1/4 cup plus 1 tablespoon crème de menthe
2 cups heavy cream
1/2 cup confectioners' sugar
Chocolate syrup, for drizzling
Fresh mint leaves, for garnish

Steps:

  • Place the chocolate wafer cookies in a food processor along with the salt; process until the cookies are the texture of smooth sand. Transfer the cookie crumbs to a bowl and set aside.
  • Melt the chocolate chips in the top of a double boiler or in a microwave. Whisk in the coconut oil and 1 tablespoon of the crème de menthe until smooth.
  • Stir 2/3 cup of the chocolate mixture into the cookie crumbs until combined. Press the crumbs evenly into the bottom and up the sides of a 10-inch pie dish. Use the bottom of a measuring cup to tightly pack the crumbs to form the crust. Freeze for 10 minutes to set the crust.
  • With a small offset spatula, spread the remaining chocolate mixture over the base of the crust and 1/2 inch up the sides. Freeze for another 10 minutes to set the chocolate.
  • In the bowl of a stand mixer fitted with the whisk attachment, whip together the heavy cream, confectioners' sugar and the remaining 1/4 cup crème de menthe on high speed until stiff peaks form. Spoon the whipped filling onto the pie. Freeze for at least 4 hours or overnight to set completely. Remove from the freezer twenty minutes before serving.
  • When ready to serve, drizzle the pie with chocolate syrup and garnish with mint leaves.

1 (16 ounce) can chocolate syrup
1 (8 ounce) container frozen whipped topping, thawed

  • Prepare 1 box white cake mix as directed, except substitute 3 tablespoons Creme de Menthe flavoring or liqueur, for 3 tablespoons water.

  • Make the cake: Preheat oven to 350 degrees. Butter an 8-by-12-inch cake pan. Line bottom with parchment, then butter parchment, and dust with cocoa powder. Tap out excess.

Water, vegetable oil and eggs called for on cake mix box
1/2 cup water
1 envelope unflavored gelatin
1 jar (7.5 oz) marshmallow creme
1/2 cup crème de menthe
2 cups whipping cream
2 tablespoons sugar
1 package (4.67 oz) thin rectangular crème de menthe chocolate candies, chopped
1 package (8 oz) Oreo mini chocolate creme sandwich cookies, crushed
Additional broken thin rectangular crème de menthe chocolate candies
Fresh mint leaves

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening or spray with cooking spray. Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and eggs. Cool completely, about 30 minutes.
  • Meanwhile, pour water into 1-quart saucepan. Sprinkle gelatin over water; let stand 1 minute to soften. Heat over low heat, stirring gently, until gelatin is completely dissolved.

1/4 cup butter, melted
3 (8 ounce) packages softened cream cheese
3/4 cup white sugar
3 large eggs
3/4 cup whipping cream
1/4 cup green creme de menthe

  • Preheat oven to 300F; have ready an ungreased 9-inch springform pan.
  • In a mixing bowl, combine the two crust ingredients; mix well.
  • Press in the bottom and up the sides of the pan; set aside.
  • In a large mixing bowl, with electric mixer, beat cream cheese until it is fluffy; slowly beat in sugar, beating until smooth.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in the cream and liqueur until well blended, then pour into the crust-lined springform pan.
  • Bake in preheated oven for 60 to 70 minutes or until the edges are set, but the centre jiggles ever so slightly when the pan is gently shaken.

  • Remove from oven and place on a wire rack on your counter for one hour, or until completely cooled.
  • Cover, then refrigerate for at least three hours before serving.
  • Just before serving, carefully run a table knife around the edges of the crust to loosen, then carefully remove the sides of the pan.
  • If desired, garnish individual servings with whipped cream and a crumbled or chopped chocolate mint (the kind that has the green stripe).

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
