This is my own sauce, though I'm sure it is similar to many others. I usually use this with fettuccini, but it is excellent with black/squid ink pasta.

2 tablespoons butter
1 (10 ounce) can whole clams
2 garlic cloves, smashed (lay garlic clove on board and smash, remove skin, do not chop)
1 (8 ounce) bottle clam juice
1 cup white wine
1/2 cup heavy cream
1 medium tomatoes, chopped (see note) (optional)

Steps:

  • Melt butter in heavy skillet over med/low heat.
  • Add whole clams with juice, and garlic. Cook over low heat until clams are heated through and edges begin to curl.
  • Remove clams. Add the bottle of clam juice, white wine and heavy cream. Cook about 10 min to reduce slightly. This sauce will be thin. You want a bit of broth in your dish.
  • Remove garlic cloves
  • Add clams back into sauce and toss with your preferred pasta. I usually use fettuccini
  • Note: I often like to add a chopped tomato to this sauce. You would add the tomato after the 10 min cooking time, just to warm the chopped tomato.

2 tablespoons olive oil
2 tablespoons butter
1/4 cup chopped fresh parsley
3 cloves minced garlic
4 (6 ounce) cans chopped clams, drained,reserve juice
1 cup heavy cream
1/4 cup dry white wine
1 lb linguine, cooked to pkg directions
salt and pepper
grated parmesan cheese

Steps:

  • Saute garlic and parsley over medium heat in butter and olive oil; do not brown garlic.
  • Add reserved clam juices, heavy cream and wine.
  • Simmer, uncovered until mixture is reduce to thin sauce consistency for about 10 minutes.
  • Season with salt and pepper to taste.
  • Add clams and warm through.
  • Add cooked linguine to pan and toss to coat.
  • Top with Parmesan cheese and serve.

2 cans (6.5 oz each) chopped clams, drained (reserve liquid)
2 cloves fresh garlic, chopped
1 T. Extra Virgin Olive Oil
Freshly Ground Black Pepper
3 T. freshly chopped Italian (flat leaf) parsley (or more to taste) Reserve some for garnish.
3/4 C. 2% milk
1/2 C. half and half
1 lb. linguini pasta (Molisana is best), cooked al dente per package instructions

Steps:

  • In medium saute skillet, lightly saute chopped garlic until just lightly brown. Add reserved clam liquid all at once, bring to simmer and continue to simmer until reduced by 1/3, about 4-5 minutes. Add chopped clams and freshly ground pepper to taste. Cook until it begins to simmer. Meanwhile, cook pasta in salted water. Add freshly chopped parsley, milk and cream to sauce, about 2 minutes before pasta is finished. Continue to simmer, stirring frequently. Drain pasta (do not rinse). Place in serving bowl and toss with prepared sauce. Garnish with additional parsley, if desired.

3 Tablespoons finely minced onion
4 Tablespoons butter or margarine
1 cup hot water
2/3 cup milk
2 Tablespoons dry white wine
One 6.5 oz. can minced clams, drained; reserve liquid
2 Tablespoons chopped fresh parsley

Steps:

  • In large saucepan, sauté onion in butter or margarine until tender but not brown. Add water, milk, wine, reserved liquid from clams, pasta and contents of seasoning packet; bring just to a boil. Reduce heat, cook uncovered over medium-low heat 3 minutes, stirring frequently. Add drained clams, heat through. Remove from heat. Let stand 5 minutes. Sauce will thicken as it stands. Transfer to serving dish and sprinkle with chopped parsley.

1 lb. box linguine
1 medium onion, chopped
1/4 c butter, cubed
2 Tbsp avocado or other oil
1 rounded tsp. garlic powder (or to taste)
3 Tbsp flour
1 14.5 oz. can chicken broth
1 c claim juice
1/2 c heavy cream
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp black pepper
1/8 tsp cayenne pepper
2/3 c parmesan cheese
2 or 3 6.5 oz. cans minced clams (depending on how much you like clams)

Steps:

  • 1. Heat oil and butter in a skillet. Saute onions and clams, adding the garlic powder, oregano, salt, pepper, and cayenne. Cook onions until tender.
  • 2. Add the flour and mix well, heating the flour for about 30 seconds to get rid of its taste. Pour in chicken broth, clam juice, and cream. Bring to a simmer and add Parmesan cheese. Simmer and stir until cheese is melted.
  • 3. Served over cooked pasta. (Make sure to salt the cooking water for the pasta well.)

Tips:
