2 tablespoons margarine or butter
1 large onion, chopped (1 cup)
2 medium carrots, cut into 1/4-inch slices (1 cup)
1/2 pound mushrooms, sliced (3 cups)
2 cups Progresso™ chicken broth (from 32 oz carton)
1 package (6.2 ounces) fast-cooking long grain and wild rice
1 can (15 1/4 ounces) whole kernel corn, drained
1 can (10 3/4 ounces) condensed cream of potato soup
2 cups milk

Steps:

  • Melt margarine in 4-quart Dutch oven over medium-high heat. Cook onion, carrots and mushrooms in margarine, stirring occasionally, until tender.
  • Stir in broth, rice and contents of seasoning packet. Heat to boiling; reduce heat to low. Cover and simmer about 5 minutes or until liquid is absorbed.
  • Stir in corn, soup and milk; cook until heated through.

2 pounds ground beef
1 large onion, chopped
1 cup chopped cabbage
1 cup chopped celery
1 cup frozen corn
1 cup frozen peas
1 cup water
2-1/4 cups cooked rice
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1-1/3 cups milk
4 bacon strips, cooked and crumbled
Salt and pepper to taste

Steps:

  • In a skillet, cook beef and onion until the meat is no longer pink; drain. Add the cabbage, celery, corn, peas and water. Bring to a boil. Cover and simmer for 5-10 minutes or until vegetables are tender. In a bowl, combine beef mixture, rice, soups, milk, bacon, salt and pepper; mix well. Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes or until heated through.

This is an easy side dish I make using rice. It's very flavorful. You can add cooked diced chicken to make a casserole meal.

1 can(s) cream of chicken soup
1 can(s) cream of celery soup
1 pkg (envelope) liption's onion soup mix
2 oz cream cheese
1 1/2 c cooked rice
1/2 c water
1/2 pkg frozen peas and carrots
1 1/2 c cheddar cheese, shredded
1/4 c freshly grated romano cheese (optional)
1/4 c freshly grated parmesan cheese (optional)
pepper to taste
dash garlic powder (optional)

Steps:

  • 1. Preheat oven to 350'F. Bring a large pot filled with water to a boil that has been lightly salted. Add uncooked rice and cook rice until done according to packages directions.
  • 2. In a large bowl mix both cans of creamed soups, cream cheese and envelope of onion soup mix. Add 1/2 cup of water. Then add frozen peas and carrots. Mix all ingredients.
  • 3. Stir rice into soup mixture and add a 1/2 cup of cheese. Place in a greased casserole dish and place in oven until casserole becomes bubbly.
  • 4. Add remaining 1/2 of cheese to the top of casserole or top with crushed Ritz crackers and bake until top is browned.
  • 5. When done out of the oven let casserole for about 10 minutes and serve as a side dish. Enjoy!

8 cups coarsely chopped fresh cauliflower
4 cups fat-free milk
1/4 teaspoon pepper

Steps:

  • In a large kettle, combine broth, carrots, potatoes, onions and rice; cover and bring to a boil. Reduce heat; simmer for 20 minutes. Add broccoli and cauliflower; simmer for 20 minutes or until the vegetables are tender. Cool slightly. Puree half of the mixture in a blender or food processor; return to kettle. Add milk and pepper; mix well. Heat through (do not boil).
