My oldest stepdaughter says this is her very favorite vegetable dish of all time, and asks me to make it every time she's in town. So easy, SO yummy, and so gone! Steps:
- 1. Let cream cheese container come to room temperature. Cook vegetables according to package directions, or simply microwave them in the original bag using the "frozen vegetable" setting!
- 2. If you choose to go with fresh veggies, it takes about 4 or 5 cups of mixed broccoli, carrots, and cauliflower pieces to be roughly equivalent to a 16 ounce bag of frozen, then you'd either steam them in a veggie steamer, or steam them in the microwave (mine has a "fresh veg" setting as well, and it's spot on). Then you'd simply continue with the next step as usual.
- 3. Combine hot cooked veggies, cream cheese, and mushroom soup together in a large bowl until well blended. Transfer to a greased 2-quart casserole dish, top with croutons, and bake at 350 degrees for 30 minutes or until bubbly, and serve!

CREAMY VEGETABLE CASSEROLE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Thaw vegetables..drain. In a large casserole combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and fried onions; bake 5 minutes longer.
Tips:
- Choose a variety of vegetables: Use a mix of colors and textures to create a visually appealing and flavorful dish.
- Prep your vegetables: Wash, peel, and chop your vegetables before you start cooking. This will save you time and hassle.
- Use a creamy sauce: The creamy sauce is what makes this casserole so rich and decadent. Be sure to use a high-quality sauce that you enjoy the taste of.
- Don't overcook the vegetables: The vegetables should be tender but still have a bit of a bite to them. Overcooked vegetables will become mushy and lose their flavor.
- Top with cheese: A layer of cheese on top of the casserole will give it a golden brown crust and extra flavor.
- Let the casserole rest before serving: This will allow the flavors to meld together and the casserole to set.
Conclusion:
This creamy vegetable casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to get your daily dose of vegetables, and it is also a kid-friendly dish. The creamy sauce and cheesy topping make it irresistible, and the vegetables add a pop of color and flavor. This casserole is sure to be a hit at your next potluck or family dinner.
