Extremely low in fat and healthy. These creamy potatoes are my husband's creation. Time 1h10m

Yield 12 serving(s)

Number Of Ingredients 9

8 -10 potatoes (average size)
1/4 cup vegan mayonnaise (Use vegenaise if you can. It's the real secret to the creamy!)
1/2-1 1/2 cup plain soymilk (until desired thickness)
1/2-1 teaspoon cayenne pepper
2 -3 tablespoons italian seasoning
1 -2 teaspoon seasoning salt
1 -2 teaspoon onion powder
1 -2 teaspoon garlic powder
salt & pepper

Steps:

  • Boil Potatoes until soft.
  • Drain and Mash the Potatoes.
  • Add all ingredients to the potatoes; mixing and tasting to desired flavor and thickness.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are best for mashed potatoes because they are starchy and creamy.
  • Boil the potatoes in salted water: Salting the water helps to flavor the potatoes and prevents them from becoming bland.
  • Drain the potatoes thoroughly: This will help to prevent the potatoes from being watery.
  • Mash the potatoes with a potato ricer or food mill: This will give you the smoothest and creamiest mashed potatoes.
  • Add milk and butter gradually: This will help you to control the consistency of the mashed potatoes. You can add more milk and butter if you want them to be creamier.
  • Season the mashed potatoes to taste: Salt, pepper, and garlic powder are classic seasonings for mashed potatoes. You can also add other herbs and spices, such as rosemary, thyme, or sage.
  • Serve the mashed potatoes immediately: Mashed potatoes are best when they are served hot and fresh.

Conclusion:

This recipe for creamy vegan mashed potatoes is a delicious and easy side dish that is perfect for any occasion. The potatoes are creamy and flavorful, and the vegan butter and milk make them a great option for those who are avoiding dairy. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying dish that everyone will enjoy.
