1/4 cup sun-dried tomatoes, chopped or 2 tablespoons sun-dried tomato paste

2 cups chicken stock
1 teaspoon onion powder
1 tablespoons Italian seasoning
1/2 teaspoons salt
1/2 teaspoons pepper
1 (9-ounce) package cheese-filled tortellini
1/2 cup shredded Parmesan cheese

Steps:

  • Sauté garlic with the olive oil in a large stock pot over medium heat until golden brown. Be sure to keep an eye on it so it doesn't get too brown or burnt. 1 tablespoon plus 1 teaspoon canola oil
1/4 teaspoon salt
1 small onion, chopped (about 1 cup)
3 cloves garlic, minced (about 1 tablespoon)
1 small jalapeno pepper, seeded and finely chopped
1 teaspoon ground cumin
3/4 teaspoon dried oregano
4 cups low-sodium chicken broth
2 (14.5-ounce) cans no salt added diced tomatoes. with juice
1/4 cup fresh lime juice
1/4 cup reduced-fat sour cream
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat the oven to 375 degrees F.

2 (15 ounce) cans diced fire-roasted tomatoes

10 fresh basil leaves, chopped or 1 tablespoon dried basil

3 tablespoons Italian-style tomato paste
