CREAMY TOMATO BASIL SOUP
I created this soup while trying to duplicate one I enjoyed at a restaurant in Philadelphia. It isn't exactly right, but it's close! My husband and I love this soup on cold nights with a grilled cheese sandwich. It's so easy to make that we often have it on weeknights, and I also serve it during Lent.

CREAMY TOMATO SOUP- FROM SCRATCH
Another 'made from scratch' family favorite. The hardest part is cutting all of the tomatoes! I like to use Roma but any tomatoe you like will do. The half and half really adds great texture to the soup so don't cheat and add skim milk or other low fat milk. It will really take away from the great taste of the soup. The touch of cloves adds a special taste that will not be missed. A must have in this soup!

Steps:
- Heat oil in a 2 quart sauce pan over medium high heat.
- Add onions and garlic and sauté until tender, then add tomatoes, and mush them up a bit, and stir.
- Cook over medium heat about 10-15 minutes, until tomatoes are quite soft and breaking down.
- Add water, basil, bouillon cubes, salt and pepper, and sugar.
- Bring to boil, reduce heat to low, cover and simmer about 20 minutes.
- Near the end of the cooking time, heat half and half or milk so that it is hot.
- Add hot milk to soup and stir.
- Pureé with an arm blender, or do it in batches in a blender.
- Strain soup through a sieve or run it through a food mill to eliminate any peels and seeds that remain.
- Mix egg with about 1/4 cup flour (amount will depend on how firm you like your dumplings) and salt and pepper to taste, until well combined.
- Bring soup to just below boiling and drop in dumplings by very small spoonfuls. Cook about three minutes, or until dumplings float to the surface. Dumplings should be almost like spaetzle, quite small, and soft when cooked.
- Serve hot with chopped fresh basil or toasted croutons as a garnish if desired.
CREAMY TOMATO SOUP
Steps:
- Place a Dutch oven over medium-high heat. Add the olive oil and heat until just fragrant. Place 8 quarters of the bread into the hot oil and fry until golden brown, about 30 seconds on each side. Remove the bread and set aside for serving.
- Add the garlic, onions and 1/2 teaspoon salt to the oil. Cook, stirring frequently, until the onions start to lose their color and soften, about 8 minutes. Add the tomato paste and cook until caramelized, about 1 minute more. Pour in the vegetable stock, canned tomatoes and basil and stir to combine. Swirl 1/2 cup water in each can of tomatoes and pour into the soup. Bring to a simmer, reduce the heat to low and simmer until the onions are soft, about 30 minutes.
- Meanwhile, rip the remaining bread into bite-size pieces and submerge them in the cream in a medium bowl.
- Puree the soup until smooth using an immersion blender. Add the cream and bread. Puree again until free of any lumps. Stir in the honey and taste for seasoning. Serve warm, each bowl topped with an olive oil crouton.

CREAMY TOMATO AND LENTIL SLOW COOKER SOUP
a spicy soup based on a Breville recipe in the slow cooker's sample recipes. I have modified this a bit - see which version you prefer.Originally it included 4 cloves garlic, 3 tsp minced chilli and you stirred 1/3 cup sun dried tomato pesto through at the end. I found this too hot. Even this version is fairly spicy but yummy! Next time I make it I will leave out the chilli altogether and just add sun dried tomato pesto.
