I made this last night from things in the pantry and fridge. I guess it's based loosely on Alamatriciana, though that has crisp bacon and no cream or herbs!

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, crushed
6 slices bacon, diced
1/2 cup white wine
dried red chili pepper flakes, to taste (I used about 1/2 teaspoon)
1 (700 ml) jar tomato sauce
1/2 cup water
1 teaspoon chicken stock powder
1/2 cup cream (I used light)
1 tablespoon chopped fresh basil
2 tablespoons chopped fresh parsley
fresh ground black pepper

Steps:

  • Heat the oil in a heavy based fry pan over medium heat.
  • Add the onion and cook for about 5 minutes, add the bacon and garlic, and cook for a further 5 minutes or until the bacon is cooked to your liking.
  • Pour in the wine, and allow to cook and reduce for a couple of minutes, then add the chilli flakes, tomato sauce, water and stock powder.
  • Simmer for about 15 minutes.
  • Add the cream and fresh chopped herbs and freshly ground black pepper, reheat and serve immediately over the pasta of your choice.
  • We ate this last night over spinach and cheese tortellini.

A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

1 can tomato paste, mixed with about
2 -3 tablespoons water
1 -2 tablespoon olive oil
3 -5 tablespoons cream
1 -2 clove crushed garlic
fresh ground black pepper
chopped fresh basil or other fresh herb

Steps:

  • Heat a saute pan on medium heat.
  • Pour in the olive oil.
  • Stir the tomato paste gently into the oil.
  • It may not completely mix just yet.
  • (Don't get the heat too high).
  • Add the cream and stir into the tomato mixture.
  • Heat it gently so that it almost starts to simmer.
  • At this point it is done.
  • Add the crushed garlic and fresh ground pepper.

1 lb mushroom, quartered
1 1/2 cups broccoli, coarsely chopped and blanched
3 tablespoons olive oil
1 cup light cream
1 cup canned plum tomatoes, drained and coarsely chopped
1 teaspoon crushed dried oregano
1 teaspoon dried basil
1/2 teaspoon salt, more to taste
1/2 teaspoon fresh ground pepper

  • Cook pasta until al dente,drain and toss with 1 tbl.

  • Heat 3 tbls.

  • Add the broccoli just before serving and toss gently again.
  • Taste for seasonings and adjust to your liking.

1 (16 ounce) jar roasted red bell peppers
9 ounces low-fat, firm silken tofu
1 ½ tablespoons tomato paste
2 cups vegetable broth
1 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
½ onion, chopped
10 spears asparagus, sliced diagonally
8 ounces fresh mushrooms, sliced
1 teaspoon minced garlic
1 (16 ounce) can diced tomatoes
½ teaspoon hot chile paste
ground black pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water, cook pasta until al dente. Drain well.
  • Meanwhile, in a blender or food processor puree roasted red and yellow peppers, tofu, tomato paste, vegetable broth, balsamic vinegar, and Italian seasoning. Set aside.

•5 cloves garlic, finely minced, divided
•1/4 cup red wine vinegar
•1 tsp Dijon mustard
•1/2 tsp cinnamon, ground
•1/2 tsp fresh ground black pepper
•1 lb lean eye round steak, cubed
•16 oz whole-wheat farfalle pasta
•Olive oil cooking spray
•1 medium yellow onion, finely diced
•1 28-oz jar or can no-salt-added crushed tomatoes
•1 1/2 tsp Italian seasoning
•1 tsp dried basil
•8 oz low-fat sour cream

Steps:

  • 1.Prepare marinade: In a bowl, whisk together 3 cloves garlic, vinegar, Dijon, cinnamon and pepper. Pour marinade over steak cubes in another container, cover and refrigerate for at least 1 hour. (You can also leave steak to marinate overnight.) 2.Cook farfalle according to package directions. Drain and set aside. 3.Drain steak cubes and discard marinade. Heat a large cast-iron or nonstick skillet over high heat for 1 minute. Reduce heat to medium-high, mist with cooking spray and sauté steak until browned on each side, about 4 minutes total. Remove steak from pan and set aside. 4.Mist same pan with cooking spray again, add onion and remaining 2 cloves garlic and sauté until brown, about 2 to 3 minutes. Add tomatoes and reduce heat to medium low. Add seasoning, basil and sour cream and combine. Cook for an additional 2 to 3 minutes, then mix in reserved steak and cook for 2 more minutes, until meat and sauce are completely warmed. 5.Serve 1 cup farfalle with 3/4 cup steak sauce. Garnish with an additional sprinkling of Italian seasoning, if desired.
