CREAMY SPAGHETTI SQUASH WITH FRESH PEAS AND BACON RECIPE

Creamy spaghetti squash with fresh peas and bacon Recipe image

Provided by BobN

Number Of Ingredients 7

1 spaghetti squash
5 slices of bacon (diced)
2 cups fresh (or frozen) petite peas
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 oz cream cheese
1/2 cup Parmesan cheese, plus extra for topping

Steps:

  • 1. Poke spaghetti squash with a fork throughout the skin, then place the squash in the slow cooker on high for three hours with a cup of water. 2.While squash is cooking, add bacon to a skillet, and fry up until soft. (Bacon will do more cooking in the slow cooker later.) 3. When spaghetti squash is finished, remove from slow cooker. Cut open with a knife and scoop out the spaghetti strands. 4. Place spaghetti strands back into slow cooker with bacon, peas, cream cheese and salt and pepper, and cook on high for another 45 minutes to an hour.

Tips:

  • Choose the right spaghetti squash: Look for spaghetti squash that is firm and has a deep yellow color. Avoid squash that has blemishes or soft spots.
  • Cook the spaghetti squash properly: The best way to cook spaghetti squash is to roast it in the oven. This will help to caramelize the natural sugars in the squash and give it a slightly sweet flavor. You can also cook spaghetti squash in the microwave or in a steamer, but roasting is the preferred method.
  • Use fresh peas: Fresh peas are the best choice for this recipe. They have a sweeter flavor than frozen peas and they will hold their shape better when cooked.
  • Don't overcook the peas: Peas only take a few minutes to cook. Overcooking them will make them mushy and they will lose their bright green color.
  • Use good quality bacon: The bacon is an important part of this recipe. Use a good quality bacon that is thick and has a good smoky flavor.
  • Season the dish to taste: Be sure to season the dish with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika, if desired.

Conclusion:

This creamy spaghetti squash with fresh peas and bacon is a delicious and healthy dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. The spaghetti squash is a good source of fiber and vitamins, and the peas and bacon add protein and flavor. This dish is sure to please everyone at the table.
