Provided by Elise Bauer

Categories     Dinner     Casserole     Comfort Food

Time 45m

Yield 6

Number Of Ingredients 17

12 ounces fusilli pasta
Salt for pasta water
4 tablespoons butter
2 cloves garlic, minced,
4 tablespoons flour
2 1/2 cups milk
1/2 cup heavy whipping cream
1 cup water
1/4 teaspoon ground nutmeg (more to taste)
1 teaspoon ground black pepper (more to taste)
1 teaspoon Italian seasoning (or a mix of dried oregano, thyme, and basil)
3/4 teaspoons salt (more to taste)
3 ounces (about 1 cup, packed) shredded or grated Parmesan cheese
4 ounces (about 1 cup, packed) shredded Mozzarella cheese
10 ounces diced ham (about 2 cups)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh green onion greens or chives

Steps:

  • Make pasta: Put a big pot of salted water onto boil on high heat for the pasta (4 quarts, 2 tablespoons salt). While the pasta water is heating, prep the other ingredients. Once the water has reached a rolling boil, add the pasta and stir so it doesn't stick to the bottom of the pan. Let the water return to a rolling boil and cook, uncovered, for 9 to 10 minutes, until the pasta is "al dente", cooked through but still slightly firm to the bite.
  • Make roux: Melt the butter in a large (3 to 4 quart), thick-bottomed pot on medium heat. Add the minced garlic. Let the garlic sizzle for a few seconds. Add the flour and whisk so that any lumps are dissolved. Let the roux (flour and butter) bubble and cook for a minute or two.
  • Make the sauce: Slowly add the milk and cream, a quarter cup at a time, whisking until incorporated after each addition. Increase the heat to medium high. Add 1⁄4 teaspoon of ground nutmeg and 1⁄2 teaspoon of ground black pepper. (You may want to increase these later to taste.) Add 1⁄2 teaspoon of Italian seasoning. Add half of the shredded Mozzarella and Parmesan cheeses, whisking until melted and incorporated into the sauce. Add 3/4 teaspoon of salt (again, you may want to increase this to taste). Stir in 1 cup of water (can use pasta cooking water if you want).
  • Preheat oven to 400°F
  • Combine pasta with sauce, ham, parsley, onion greens: Drain the cooked pasta and add it to the sauce. Add the ham. Add the chopped parsley and onion greens or chives. Gently stir to combine. Taste, and add more nutmeg, salt, pepper, or Italian seasoning to taste.

CREAMY HAM SPAGHETTI

Creamy Ham Spaghetti image

This, my friends, is comfort food! This is my adaptation of a recipe originally by The Pioneer Woman, Ree Drummond. Her original recipe calls for chicken instead of ham, which is also good. This is very like a tetrazzini. I have frozen this before baking, then thawed and baked with good results.

Provided by RSL5709

Categories     Meat

Time 50m

Yield 10 serving(s)

Number Of Ingredients 9

1/2 cup butter, divided
16 ounces white mushrooms, sliced
1/4 cup flour
2 cups chicken broth
1 1/2 cups milk
1 cup parmesan cheese, grated
12 ounces spaghetti
2 cups cooked ham, diced
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Melt 2 T. butter in skillet, add mushrooms, and saute until done. Remove to large bowl.
  • Bring large pot of salted water to boil and cook spaghetti according to package directions.
  • While spaghetti is cooking, melt remaining 6 T. butter in skillet you used for the mushrooms.
  • Add flour and stir to make a roux.
  • Slowly add chicken broth, stirring to avoid lumps.
  • Add milk, and stir to combine.
  • Cook and stir until thickened, then add parmesan cheese.
  • Add sauce to bowl of mushrooms along with cooked spaghetti and ham. Stir to combine well.
  • Pour into 9x13 pan. Sprinkle with cheese and bake, uncovered, for 30 minutes or until hot and bubbly.

Tips:

  • Use a quality ham: The flavor of the ham will shine through in this dish, so it's important to use a good-quality ham. Look for a ham that is smoked or cured, and that has a nice, salty flavor.
  • Don't overcook the spaghetti: The spaghetti should be cooked al dente, or slightly firm to the bite. Overcooked spaghetti will become mushy and ruin the texture of the dish.
  • Use a creamy sauce: The creamy sauce is what makes this dish so rich and decadent. Be sure to use a sauce that is made with heavy cream or half-and-half, and that has a smooth, velvety texture.
  • Add plenty of cheese: Cheese is another key ingredient in this dish. Use a combination of shredded cheddar and Parmesan cheeses for the best flavor.
  • Bake the casserole until it's bubbly and golden brown: The casserole should be baked until the top is bubbly and golden brown. This will ensure that the cheese is melted and gooey, and that the ham is cooked through.

Conclusion:

Creamy spaghetti and ham bake is a classic comfort food dish that is perfect for a weeknight meal. It's easy to make, and it's always a hit with the whole family. The combination of creamy sauce, melted cheese, and salty ham is simply irresistible. So next time you're looking for a quick and easy meal, give this recipe a try.
