ONE PAN PASTA WITH CREAMY SHRIMP AND PESTO SAUCE
This recipe from Sunset uses only one pan. Yup, a single pan! The secret is to use frozen cooked shrimp and prepared pesto. When I make it, I thaw the shrimp by putting them in the same colander I am going to use for the pasta. Then I pour the pasta and its boiling water over the shrimp, and--voila--thawed shrimp! The recipe is very pesto-y, so, if you like, feel free to cut down on the pesto and use more sun-dried tomatoes. Also, use whatever pasta shape you like (we prefer long noodles, for instance).

CREAMY SHRIMP AND SPINACH PASTA
This pasta is from Southern Living's Editor's Choice Recipes. It is a one dish meal, and though written with shrimp, also works well with crawfish tails or diced cooked chicken breasts. Note: Fresh whole nutmeg can be stored in an airtight container for 2 to 3 years.

SHRIMP AND PASTA WITH CREAMY GOAT CHEESE SAUCE
Steps:
- Boil pasta in water until al dente. In a ziplock bag, combine shrimp through tomatoes and marinate in refrigerator for an hour. Heat 2 tablespoons of oil over medium-high heat in a saute pan and cook mushrooms until they release their liquid and are browned. Set aside. Keeping the same saute pan at medium-high, add shrimp and marinade ingredients and saute until cooked through, about six minutes. Set aside. In the now empty pan, turn heat to high and deglaze with wine, scraping up any browned bits. Add chicken stock and reduce the liquids by half. Slowly stir in the goat cheese until melted and smooth. Add the butter at the end, and melt. Add the mushrooms and shrimp back to the sauce and warm through. When just about finished, add the drained pasta and toss to combine. Add a little bit of reserved pasta water if the sauce is too thick or doesn't cling to the pasta.
CREAMY SHRIMP AND PASTA
From Prevention. This isn't the most attractive pasta sauce I've ever made, but it sure is yummy! It is a great use for cooked shrimp, which I often find on sale. The original recipe calls for snow peas instead of green beans (add to pan with shrimp, don't boil) and roasted red peppers instead of fresh. I was worried at first that there was too much thyme, but it comes out nicely in the end.

CREAMY SHRIMP AND MUSHROOM PASTA
I'd rather have an Alfredo sauce, but this is okay if it's not available. Something is missing though. I got this recipe from chaosinthekitchen.com

Steps:
- Boil and salt a large pot of water and cook your pasta. I usually only use about half of an 8 oz box, preferring fewer noodles.
- While your pasta is cooking, cook your shrimp if necessary and reserve. If your shrimp are pre-cooked and frozen, quickly thaw them under running water.
- In a large skillet melt 2 tbsp of butter over medium heat and saute mushrooms until soft and brown. Season with salt and pepper.
- Reserve cooked mushrooms and melt remaining butter in the skillet. Add minced garlic, cream cheese, and herbs. At this point, I generally feel like something has gone terribly wrong. The cream cheese doesn't really melt and starts to look almost curdled, don't worry about it! It will all smooth out and be wonderful when we add the water. I promise.
- Simmer cream cheese mixture until well blended. Get a scoop of boiling pasta water from your noodle pot and mix it in, stirring quickly to smooth out the sauce.
- Keep sauce hot and add shrimp and mushrooms, mix well and simmer (stirring often) until everything is hot and thickened, about 10 minutes-you wont ruin this sauce by accidentally boiling it so don't worry.
- Toss sauce with cooked noodles and serve.
- Sprinkle with Parmesan Cheese & salt, to taste.
CREAMY SHRIMP AND PEA PASTA
Steps:
- Cook pasta according to package directions, omitting salt and fat. Melt butter in a large nonstick skillet over medium heat. Add shrimp and garlic; sauté 4 minutes or until done. Add half-and-half, 3 tablespoons chopped basil, salt, and pepper; bring to a simmer, and cook, uncovered, 4 minutes. Add cheese, and cook 1 minute or until cheese melts. Place peas in a colander. Drain pasta over peas in colander. Add pasta and peas to shrimp mixture, and toss gently. Cook over low heat 2 minutes. Stir in remaining chopped basil. Serve immediately.
CREAMY TOMATO AND SHRIMP PASTA WITH PEAS
Steps:
- in a large chef's pan heat 2 tbsp of oil. Add all ingredients except parmesan, shrimp and pasta and cook on medium heat. In another skillet cook shrimp half way with the remaining olive oil. Add shrimp and parmesan to the creamy tomato mixture. simmer for 5 more minutes or until shrimp is fully cooked. Add the cook pasta and stir all ingredients together. Scoop into pasta bowls and top with basil and serve.
Tips:
- Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. Avoid using frozen shrimp if possible.
- Cook the shrimp properly: Shrimp should be cooked just until they turn pink and opaque. Overcooked shrimp are tough and rubbery.
- Use a good quality pasta: The type of pasta you use can make a big difference in the final dish. Choose a pasta that is made with high-quality ingredients and holds its shape well.
- Don't overcrowd the pasta: When cooking pasta, be sure not to overcrowd the pot. This will prevent the pasta from cooking evenly.
- Use a flavorful sauce: The sauce is what really brings a shrimp and pasta dish together. Choose a sauce that is flavorful and complements the shrimp.
Conclusion:
Shrimp and pasta is a classic dish that can be enjoyed by people of all ages. It's a quick and easy meal to make, and it's also very versatile. You can change up the ingredients and flavors to create a dish that's perfect for your taste buds. So next time you're looking for a delicious and easy meal, give shrimp and pasta a try. You won't be disappointed!
