AUTHENTIC LOUISIANA RED BEANS AND RICE
Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

SOOTHING CREAMY RICE
Steps:
- In a medium size saucepan combine rice with broth and bring the liquid to a boil over medium heat. Cover and simmer until the rice is almost tender, about 15 minutes. Stir in the peas and simmer, covered 5 minutes longer. At this point you can serve half to the kids, garnished with some cheese. If you are making this for adult tastes only stir in Worcestershire, cayenne and grated cheese. Remove the pan from the heat and continue to stir until the cheese is entirely melted. Season to taste with salt and pepper and serve immediately before the dish gets gummy.
- To reheat leftovers and change the flavor a bit, layer the rice in a baking dish and top with some tomato sauce. Cover and reheat in a microwave or regular oven until very hot.
Tips:
- Choose the right kind of beans: Different types of beans have different flavors and textures. For this recipe, I recommend using black beans, kidney beans, or pinto beans. Black beans are the most common type of bean used in Cuban cuisine, and they have a slightly sweet flavor. Pinto beans are also a good choice, and they have a more mild flavor. Kidney beans have a slightly more pronounced flavor, and they hold their shape well when cooked.
- Soak the beans overnight: Soaking the beans overnight will help to soften them and reduce their cooking time. You can also quick-soak the beans by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
- Use a flavorful broth: The broth that you use to cook the beans will add a lot of flavor to the dish. I recommend using a chicken or vegetable broth, but you can also use water if you prefer. If you are using water, you may want to add some salt or other seasonings to the pot.
- Add plenty of vegetables: Vegetables add color, flavor, and nutrients to this dish. I recommend using a variety of vegetables, such as onions, peppers, carrots, and celery. You can also add other vegetables, such as corn, tomatoes, or zucchini.
- Season the dish to taste: Be sure to season the dish to taste before serving. I recommend adding salt, pepper, cumin, and oregano. You can also add other seasonings, such as chili powder, garlic powder, or onion powder.
Conclusion:
This creamy rice and beans recipe is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice and beans. With its creamy texture and flavorful broth, this dish is sure to be a hit with everyone who tries it.
