Ready, Set, Cook! Hidden Valley Contest Entry. My love for shrimp and grits runs deep and this recipe by far is my favorite. The first night I made this dish, my husband requested it again 3 nights later. It is comfort food stepped up a notch.

2 teaspoons salt
1 cup quick-cooking grits (not instant)
1 1/4 cups half-and-half
2 tablespoons butter
1/2 cup Hidden Valley® Original Ranch® Dressing
1 cup grated white cheddar cheese
1/4 cup fresh chives, chopped
4 tablespoons olive oil
2 shallots, finely chopped
2 garlic cloves, finely chopped
20 large shrimp, shelled and deveined
salt & freshly ground black pepper
4 cups Baby Spinach
1 lemon, juice and zest of

Steps:

  • Bring 4 cups of the water and 2 teaspoons of salt to a boil in a medium saucepan over high heat. Slowly whisk in the grits and bring to a boil. Reduce the heat to medium low, cover and continue cooking until the grits are soft and thickened in consistency (about 20-25 minutes). Stir occasionally. Off the heat, stir in Ranch dressing, cheddar cheese and chives. Cover until ready to use.
  • In a large skillet, add olive oil and heat on high. Add shallots, garlic, and stir. Season the shrimp with salt and pepper. Add shrimp to pan and cook for about 2 minutes on each side. (Monitor closely because the garlic and shallots will burn quickly while on high heat. Adjust heat slightly if needed). Remove shrimp to plate. Add spinach, lemon, and zest to pan in this order. Stir well to coat with remaining oil and goodies left in the pan. Cook just until wilted about 2-3 minutes. Add salt and pepper if needed.
  • Divide grits among 4 shallow bowls, top with spinach and then shrimp. Serve while hot.

1 pound large shrimp, peeled and deveined, shells reserved
4 cups seafood stock
3 tablespoons good olive oil
2 cups chopped leeks, white and light green parts (3 leeks)
1 tablespoon chopped garlic (3 cloves)
Pinch cayenne pepper
1/4 cup Cognac or brandy
1/4 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes. Strain and reserve the stock. Add enough water to make 3 3/4 cups. Meanwhile, heat the olive oil in a large pot or Dutch oven. Add the leeks and cook them for 10 minutes over medium-low heat, or until the leeks are tender but not browned. Add the garlic and cook 1 more minute. Add the cayenne pepper and shrimp and cook over medium to low heat for 3 minutes, stirring occasionally. Add the Cognac and cook for 1 minute, then the sherry and cook for 3 minutes longer. Transfer the shrimp and leeks to a food processor fitted with a steel blade and process until coarsely pureed. In the same pot, melt the butter. Add the flour and cook over medium-low heat for 1 minute, stirring with a wooden spoon. Add the half-and-half and cook, stirring with a whisk, until thickened, about 3 minutes. Stir in the pureed shrimp, the stock, tomato paste, salt, and pepper and heat gently until hot but not boiling. Season, to taste, and serve hot. ;

1 with top, chopped green onion
4 tablespoons butter
1 clove minced garlic
1/3 cup all purpose flour
2 cups half and half
3 1/2 cups fish stock
3 tablespoons chopped fresh parsley
8 oz cooked or lobster meat, chopped shrimp
3 slices white bread

Steps:

  • In a medium saucepan, add celery, onions and butter, stirring occasionally. When tender add garlic and mix together. Stir in flour and half and half. Let simmer for 5 minutes.
  • Stir in fish stock and parsley. Cook for 10 minutes until it thickens. Add shrimp meat and let simmer for 10 minutes or until heated through. Stir occasionally. Add salt, to taste.
  • When ready, serve with croutons.

  • Preheat oven to 350 °F.

1/2 cup butter
1 large shallot, minced
3 stalks celery, cut into chunks
1 cup baby carrots
1/4 cup chopped parsley
1/2 teaspoon dried thyme
2 bay leaves
2 slices lemon zest
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper
1/2 sherry wine
3 tablespoons all-purpose flour
1 1/2 cups seafood stock
2 cups heavy cream
2 cups milk
1 cup Hidden Valley® Original Ranch® Dressing
kosher salt
fresh ground pepper, to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add butter and melt. Add the shrimp shells, shallots, celery, carrots, parsley, thyme, bay leaves, lemon zest, tomato paste and cayenne. Cook, stirring every occasionally, until the shells are red and the vegetables are tender, about 10 to 12 minutes.
  • Remove from heat and add sherry. Ignite the sherry with a wand lighter and cook until the flame subsides. Return the pot to the heat, sprinkle in flour and stir. Cook for another 2 minutes. Add seafood stock to deglaze. Stir browned pieces from the bottom of the pot. Add cream, milk, and HIDDEN VALLEY RANCH and bring to a boil. Turn the heat to low and simmer until reduced and thickened, 40 to 45 minutes. Strain into a clean pot and season with salt and pepper. Bring bisque to a simmer.
  • Chop shrimp into small pieces and add to bisque. Cook about 3 minutes until shrimp are done. Taste for seasoning and garnish with HIDDEN VALLEY RANCH DRESSING and chives.

1 lb shrimp, uncooked and peeled
4 cups chicken broth

  • In large saucepan melt butter and saute shrimps until just cooked through about 4 minutes.
  • Using slotted spoon transfer shrimps to a bowl.

2 Tbsp olive oil
1 1/2 medium white onions, finely chopped
4 medium cloves of garlic, minced
2 Tbsp all-purpose flour
2 c enhanced chicken broth (broth in which additional chicken has been cooked or broth kicked up with a teaspoon of chicken bouillon granuals)
1 c heavy (whipping) cream
2 Tbsp new mexico chili powder (or other chili powder if you must)
1 tsp ground cumin (home-ground from cumin seeds does make a difference)
1 tsp ground coriander (again, home-ground makes a difference)
2 pkg (12 ounces each) frozen 60-80 count shrimp, thawed, shells and tails removed, de-veined and coarsely chopped
1 c sour cream
OPTIONAL FOR GARNISH:
fresh cilantro sprigs
sliced avocado
additional cooked shrimp

Steps:

  • 1. In a 3 1/2 quart (or a little larger) saucepan or Dutch oven over medium-high heat, heat the oil until it is shimmering. Sauté the onion until it is tender. Add the garlic and sauté for 1 minute longer. Stir in the flour until it is blended. Stir in the broth, cream, chili powder, cumin and coriander and bring them to a boil. Reduce the heat, cover and simmer for 5 minutes.
  • 2. Add the shrimp to the soup and simmer them until the shrimp turn pink, about 5 minutes longer. Gradually stir 1 cup of the hot soup into the sour cream. Gently return that mixture back to the pan, stirring constantly. Heat it through, but do not let it boil.
  • 3. If desired, garnish the servings with cilantro, avocado and additional shrimp.

8 jumbo eggs (Grade A)
1 cup raw spinach (rough cut)
1 (3/4 lb) whole lobster (cooked, use meat from tail, front legs, and claws)
1/2 lb raw shrimp (peeled and deveined, chopped)
1/2 cup swiss cheese, shredded
1/4 cup half-and-half cream
1/4 cup milk
3 -4 red potatoes, shredded (avg size)

  • First prepare sauce by wisking milk into sour cream until smooth. Wisk in one half of Hidden Valley Ranch Mix, chives, lemon zest, and garlic powder. Stir in tomato. Set aside in refrigerator to use later.
  • Next prepare egg mixture for frittata by beating eggs until smooth. Wisk in Half & Half, milk, the other half of Hidden Valley Ranch Mix, sumac, lemon zest, salt, and pepper. Set aside.
  • In a 10" oven safe skillet melt 2 Tbsp butter over medium heat. Lightly sautee red potatos over medium high heat until lightly browned. If necessary add more butter or coconut oil to prevent sticking. Add shrimp and minced garlic to pan, and sautee until shrimp begins to turn pink. Salt lightly to taste. Then add Spinach to pan in order to wilt for about a minute or so. Next add egg mixture to pan while stirring. Stir in swiss and lobster. Keep stirring every minute or so to keep circulating raw egg to bottom of pan as it begins to set up. When mixture is still moist but setting up at the top, add layer of Parmesan to the top and pop under the broiler on high for 4 minutes (with the rack on the 2nd from highest position in oven) turning a quarter turn every minute. Cheese should be nicely bubbling and lightly browned on top.
  • Pull from the oven and let cool for about 10 minute Sprinkle sauce on top (leaving the rest in a small bowl to serve with the Frittata). Sprinkle chives on top, and serve.
