1 cup instant rice
1/4 cup raisins
2 egg yolks, beaten
1 1/3 cups milk
2 1/4 tablespoons butter or 2 1/4 tablespoons margarine
1/4 cup sugar
1 teaspoon cornstarch
1/4 teaspoon vanilla extract
nutmeg, as needed
cinnamon, as needed
1 cup water
1/4 teaspoon salt

Steps:

  • Combine rice, water and salt in 3-quart saucepan.
  • Bring to a vigorous boil. Reduce heat, cover and simmer until all water is absorbed, about 3 minutes.
  • Combine sugar and cornstarch.
  • Add milk, sugar mixture and raisins to rice.
  • Heat to boiling; boil 1 minute, stirring constantly.
  • Remove from heat. Stir in butter and vanilla.
  • Slowly stir about 1 cup of the hot rice mixture into egg yolks in bowl.
  • Stir into remaining mixture in saucepan.

Ummm!! I like rice pudding & this one is GOOD!! Got the recipe out of a magazine. Have made it alot and it never last long around our house!!

3 1/2 c low-fat (1%) or skim milk
1 c uncooked white rice (long grain)
1 can(s) fat-free sweetened condensed milk (14 ounce)
1/3 c raisins
1/4 tsp vanilla extract
reduced-fat frozen whipped topping, optional
cinnamon, optional

Steps:

  • 1. Combine milk and rice; bring to a boil over medium-high heat. Reduce heat to medium-low; cover. Cook, stirring occasionally, until mixture is creamy and liquid is almost absorbrd. 25 minutes.
  • 2. Stir in condensed milk, raisins, and vanilla. Cook stirring occasionally, until thickened, about 10 minutes.
  • 3. Remove from heat. Let stand, covered, 10 minutes. If desired, garnish with whipped topping and cinnamon.
